Sticky Char Siu Pork Ribs 叉烧排骨 Chinese BBQ Pork Recipe
Ingredients:
Serves 4 pax

1L water
2 tablespoons premium dark soy sauce
1 tablespoon oyster sauce
2 tablespoons hoisin sauce
80ml (2.7fl oz) Chinese cooking wine (Shaoxing Huatiao wine)
2 slices ginger
1 bulb of garlic (chopped)
20g (0.7oz) rock sugar
2 tablespoons red fermented beancurd sauce
1.5 tablespoons maltose
1 teaspoon five spice powder
800g (28.2oz) prime ribs
Some toasted sesame seeds

Chinese Roasted BBQ Pork | Char Siew | Char Siu | 叉燒 [Nyonya Cooking]
Char Siu, a fragrant and delicious Chinese barbecued pork is a favourite in Cantonese cuisine. Often using pork shoulder or pork belly, it is marinated in a homemade sauce for hours before cooking it over the barbecue pit. Instead of pork, use chicken to make Char Siu chicken.
Char Siu or Chinese barbequed pork is one of the most delicious meat. Authentic Char Siu is simple made of a cut of pork which is then marinated with a mixture of sauces, condiments and aromatics. The meat is then roasted and glazed using the marinade. Hence, the secret to the best Char Siu lays in its marinade. Besides that, choosing the right cut of pork makes a big difference in the taste.
### Why is Char Siu red?
In many Hong Kong, Singaporean or Malaysian restaurants, Char Siu sold has often a hint of redness to it. The red tone tends to seep through the meat. This results in redness around the edges of Char Siu and can be seen when cut into slices. The colour comes from red colouring as the redness gives a nice shade to it, making the meat more delectable. For a natural shade of redness, chefs use fermented red tofu as we have used in this recipe.
### Which pork cuts for the best Char Siu?
Depends on what you are looking for. The best meat to use is pork butt also known as boston butt, located on the back of the pig, just behind the head. Pork butt is popular for char siu as it contains a good amount of marbled fats and connective tissue. When grilled or roasted slowly, the fats and connective tissue will melt away, revealing delicious flavours.
Pork belly on the other hand provides a more fatty char siu. If you are looking for leaner char siu, go for pork loin which has less fat.
For me, the best part of the meat is the edges that are slightly charred during the roasting process. It makes the meat more fragrant. As the meat roasts in the oven, the honey mixture is absorbed into the meat, thus creating a sweet and savoury layer coating the meat. This makes the char siu lips smacking good!
One can have the meat as it is or together with [wan tan noodles]( or rice. Enjoy this dish with some [pickled chillies](/recipes/pickled-chilli) or [chilli garam](/recipes/cili-garam) if you need a spicy dip. For this recipe, I used the oven but it would best if you barbecued this over a charcoal fire. The smoky flavour from the charcoal would add so much more fragrance to the dish.

HOW TO MAKE AUTHENTIC & TASTY CHAR SIU SAUCE
Char siu sauce is very versatile and can be used to marinate meats for BBQ, as a complimenting sauce to make other recipes or even as a dipping sauce.
Some may queried the authencity of this recipe as in traditional recipes, maltose syrup, hoisin sauce and red beancurd are sometimes used. However, these ingredients are not easily available in many European countries, especially if you do not live close to a chinese supermarket. Of course, you can still order them online but you will pay for the heavy delivery charges for one or two items ordered.
The question here is: by substituting these ingredients with easy obtainable ones, is the authencity of this 'char siu' sauce lacking or does it taste just as good? I hope that you will give this recipe a try to find out before making any quick assumptions.
Ingredients:
1 Tbsp Honey
1 Tbsp Shaoxing wine
1 Tbsp Light soy sauce
1/2 Tbsp Oyster sauce
1/2 tsp Dark soy sauce
1/2 tsp Five spice powder
1/4 tsp White pepper
4 1/2 Tbsps Sugar
Notes: ln colder climate countries, the honey is quite thick and l do not want to water down the sauce, therefore it is easier to dissolve the sugar with a gentle heat. l use the microwave for quickness (30 secs-1min depending on watts) or you can do this on the stove top. This will gives the char siu sauce a better consistency if you are marinating or basting meats with it. *This step may not be required if you live in a warm climate country.

Easiest Homemade Char Siu Recipe (Chinese BBQ Pork) - 蜜汁叉燒
Ingredients ⬇️ Traditionally roasted in a Chinese oven, we've come up with the easiest way to get charred and glistening BBQ Pork at home. Braised in a wok then popped into the oven to achieve the the infamous char in Char Siew.
This recipe uses pork collar but you can use your favourite parts. We heard that pork belly burnt ends are the best. ????

Char Siu Pork is Cantonese BBQ Pork. If you have been following me for some time, you know that I made Char Siu Pork before. Today, I’d like to remake this recipe and address some of your questions from before. And this is what I call, the ultimate Char Siu Pork recipe!
Char Siu Pork Written Recipe:

Prep time: 10 minutes
Marinate time: Overnight
Cook time: 1 hour and 15 minutes
For the pork
3 pounds pork butt
2 pieces fermented red bean curd (replace it with red yeast rice or red food coloring)
2 tablespoons fermented red bean curd sauce
2 tablespoon oyster sauce
2 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon dark soy sauce
2 tablespoons rose cooking wine (mei kuei lu chiew) (or replace with other cooking wine)
4 tablespoons sugar
½ teaspoon five-spice powder
½ teaspoon white pepper
3 garlic cloves, minced
For the glaze:
3 tablespoons honey (or replace with maltose)
3 tablespoons hot water
