How to Process Cling Seed Plums (and a recipe for plum sauce/syrup)
Plums can be abundant in the summer, but removing the seeds can be a major chore. Here's how to do large amounts quickly, so that you can then turn your plum pulp into jam, fruit leather, Asian plum sauce...whatever you like.
My recipe for this plum sauce was 2 cups sugar, 1 tsp each of cinnamon and cardamom, 1/2 tsp each of black pepper and allspice, and a tsp of orange extract. This made 14 pints. You can adapt this to your taste as the plums are so acidic that they can handle more or less sugar and spice as you like.

It begins with ricing the potatoes and making the dough, followed by a demonstration of how to dress your rolling pin with cloth. Then Vanessa shows you how to make the lefse on a specialized lefse pan that heats up beyond 500 degrees. The recipe calls for potatoes, salt, whipping cream, butter, and flour. For sweet lefse, simply eat it with a little butter and sugar. One idea for a savory lefse would be to put some herbed cream cheese on it and roll it up. Vanessa’s birthplace was located 50 meters from her Godmother’s famous Paulick Villa – the Summer Playground to Vienna’s Elite Art Noveau Community including Gustav Klimt, Egon Schiele, Richard Teschner and Friedrich Paulick at the turn of the 19th century.
In fact, the aunt of Vanessas' Godmother, Gertrude Floege, was the famous fashion designer Emelia Floege – life companion of the famous artist Gustav Klimt who frequently painted at the Paulick Villa..
Also the last Countess Maria dei Medici, who lived adjacent to the Eschen Villa hand wrote a poem for Vanessa as a child… Not many People can say that!
Vanessa got her teaching Degree in Salzburg but her real love and talents were for cooking.. after moving to Vancouver Island, she honed her chef skills under the eye of her brother in law Dieter von Schellwitz who had been the first executive chef at the famous Ilikai Resort in Waikiki, and had chef career in New York and San Francisco.

This recipe is an easy simple version of the Austrian cookie, but they are also very common in Italy, Norway, and other cultures. To make them you will need flour, icing sugar, eggs, vanilla, pecans, and butter. Once you've made your dough, let it rest in the fridge for an hour. And just for a little informative tidbit, the Austrian name for vanilla crescents is vanillekipferl, kipferl being little crescents. Vanillekipferl make a very sweet holiday gift.
