Try this Spiced Lentils w/ Garlic Sweet Potato Mash ????. Nice and easy to put together and perfect for those cold cozy evenings ????

Ingredients:
2 tbsp olive oil1 large onion, diced
1 1/2 cup celery diced
1 1/2 cup carrots, diced
1 chilli pepper, sliced (optional)
6 cloves garlic, diced
1 1/2 teaspoon salt
1/2 tbsp garlic powder
1 tsp paprika
1 tbsp oregano
1/3 cup tomato paste
1/4 cup red wine
1 1/4 cup brown lentils or black/beluga lentils (if you can find them)
3 medium tomatoes, diced with juices
3 1/2 cup veggie stock
2 tsp balsamic vinegar
3/4 cup crushed walnuts or pecans
1 bay leaf
Garlic butter sweet potato mash:
3 large potatoes boiled
1 1/2 tbsp melted butter
4 cloves garlic
Black pepper and salt to taste

Ingredients like lentils, black beans, onions, peppers, and tomatoes meld with a blend of aromatic spices such as chili powder, cumin, and smoked paprika to create a dish with robust and comforting flavors.
INGREDIENTS:
2 tablespoons olive oil
1 large onion
3 cloves garlic
1 red bell pepper
¼ teaspoon red pepper flakes or 1½ tablespoons chili powder blend, not pure chili powder. Adjust spiciness to taste.
2 teaspoons ground cumin
1½ teaspoons smoked paprika
½ teaspoon dried oregano
2 tablespoons tomato paste
2 bay leaves
1 cup (200 grams) of dried lentils green or brown
2 cans (15 ounces each) (460 grams) of beans or 3 cups of cooked beans. We use 1 can of black beans and 1 can of kidney beans
2 cans (15 ounces each) (800 grams) crushed tomatoes
4 cups (1 liter) vegetable broth or more as needed to fully cook the lentils
1 teaspoon salt or more to taste
2 twists of black pepper
SERVES WELL WITH
2 limes, the juice
1¼ cups (240 grams) brown rice or tortilla
quick pickled red onions or pickled jalapeños
vegan sour cream, regular sour cream, or Greek yogurt

Tasty Trini Lentils Recipe
Learn how to make Trini-style Lentils, one of the most hearty accompaniments around!
Yield: 8 - 10 Servings
INGREDIENTS
Lentils - 400g (dried)
Oil - 1/4 cup
Onion - 1/3 cup (finely chopped)
Pimento Pepper- 1/4 cup (finely chopped)
Garlic - 1 tbsp (finely chopped)
Chadon Beni/Culantro - 2 tbsp (finely chopped)
Chive - 1 tbsp (finely chopped)
Scotch Bonnet Pepper - 1 tsp (finely chopped)
Fine Thyme - 2 sprigs
Pumpkin - 1/2 lb (diced)
Tomato - 3/4 cup (diced)
Ketchup - 1/2 cup (optional)
Salted Butter - 1 tbsp (optional)
Water - 4 cups
Salt - to taste
Black Pepper - to taste
METHOD
1. Place peas in a bowl and wash under running water ensuring to remove any dirt or sediments.
2. Once cleaned, cover with water and allow to soak overnight. (Please note that you can opt to not soaking overnight and cook peas in a pressure cooker. Simply wash and drain peas and follow the recipe).
3. Drain peas and set aside.
4. Heat a medium sized pot over medium heat.
5. Add oil.
6. Once oil is heated, add onion, pimento, garlic, chadon beni, chive, scotch bonnet and fine thyme.
7. Stir and allow to sauté for 2 to 3 minutes.
8. Stir in peas.
9. Cover and allow to cook for 5 minutes.
10. Add pumpkin, tomato, ketchup and salted butter.
11. Stir until fully incorporated.
12. Cover and allow to cook for 5 minutes.
13. Stir in water, cover and cook over medium heat for 30 minutes (checking every 10 minutes).
14. Remove cover and check the consistency.
15. If it’s thick enough at this time, go ahead and add salt and black pepper to taste.
16. If not, remove cover and allow to cook until it has reached your desired consistency (checking every 5 minutes).
17. Enjoy!

LAY HO MA! Imagine a bowl of hot fluffy rice flavoured with garlic, onions, spices, and tomato - this is definitely going to be a weekly favourite. Join me in this episode and learn how to make a delicious and easy one pan lentil rice recipe. Let's begin
Ingredients:
1 cup brown lentils
1 cup basmati rice
3 pieces garlic
small piece ginger
1 red onion
1 tomato
2 tbsp olive oil
pinch of salt
1/2 tsp cumin
1/2 tsp chili powder (cayenne pepper)
1 1/2 tsp sweet paprika
1 tsp coriander
pepper to taste
1 1/2 cups veggie stock
few lemon wedges
few sprigs parsley
Directions:
1. Place the brown lentils into a large bowl. Fill with about 3 cups of water and let it soak for 8 hours or overnight. Then, strain out the lentils and set aside
2. Rinse and drain the basmati rice two to three times. Then, set aside
3. Finely chop the garlic and ginger. Dice the red onion and tomato
4. Heat up a sauté pan to medium heat. Add the olive oil and red onions. Sauté for 4-5min
5. Add the garlic and ginger. Sauté for 1-2min. Add the lentils and sauté for about 1min
6. Add the rice, salt, cumin, chili powder (or cayenne pepper), sweet paprika, coriander, and pepper
7. Add the tomato and sauté for about 1min. Add the veggie stock and give the pan a stir to deglaze
8. Turn the heat to medium high and bring to a boil. Then, cover and cook on medium low for 15min. After 15min, turn the heat off and let the rice continue to steam covered for a further 10min
9. Plate the rice and garnish with fresh lemon juice, parsley, a drizzle of olive oil, and freshly cracked pepper
