Simple, Perfect Chili

Ingredients
2 pounds ground beef
2 cloves garlic, chopped
One 8-ounce can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup masa harina
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed
Shredded Cheddar, for serving
Chopped onions, for serving
Tortilla chips, for serving
Lime wedges, for serving
Directions
Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

Ingredients
1 lb chuck roast, cubed small
2 lb ground beef
1 yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 Tbsp tomato paste
1-28oz can tomato purée
1-28oz can diced tomatoes
8-10oz draft beer (lager)
36-40oz beef broth
1-15oz can black beans
2-15oz cans dark red beans
2 Tablespoons smoked paprika
1 teaspoon cayenne pepper, less for less spice
2 Tablespoons chili powder
1 Tablespoon cumin
1 teaspoon all purpose seasoning (Natures Seasoning)
1 teaspoon Cajun seasoning
Salt and pepper to taste
2 teaspoons avocado oil

Welcome to our kitchen, where we're serving up a steaming bowl of comfort! Join us as we dive into the heartwarming world of Homemade Pinto Beans Chili. This recipe is all about flavor, warmth, and that feeling of home.
Prep Time: 10 min (+8 hours for soaking) | Cook Time: 30 min | Total Time: 40 min | Servings: 4
INGREDIENTS:
• 1 tbsp olive oil
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 1 red bell pepper, chopped
• 1 stalk celery, chopped
• 1/2 tsp Italian seasoning
• 3 medium tomatoes, chopped
• 2 cups cooked pinto beans (
• 1 cup vegetable broth
• 1/2 tsp cumin seeds (
• 1/2 tsp smoked paprika
• 3/4 tsp sea salt (
• 1 tsp chili powder
• Green onion for serving
INSTRUCTIONS:
1. In a medium pot, warm some oil over medium heat. Toss in the onion and sauté until it turns soft, which should take about 2 min.
2. Add the garlic, bell pepper, and celery to the pot, and continue to stir and cook for an additional 2 min.
3. Now, introduce the fragrant Italian seasoning, tomatoes, pinto beans, vegetable broth, cumin, smoked paprika, a pinch of salt, and the chili.
4. Cover the pot, and bring everything to a rolling boil. Then, reduce the heat to a gentle simmer and let it cook for 20-25 min, or until your chili reaches the desired thickness.
5. Before serving, don't forget to sprinkle some freshly chopped green onions as a flavorful garnish. Enjoy!
