How to Cook PERFECT, TENDER Pinto Beans -- Authentic New Mexican Frijoles Asina
Hey Chile Heads! In this video, I show you the ins and outs of Frijoles -- the Spanish word for beans. Every New Mexican household has their own technique when it comes to preparing Frijoles, but for those of you who may not have had that exposure, this video will show you the many different ways you can prepare a flavorful pot of beans. I know you're gonna love it!

Frijoles Asina – Perfect New Mexican Pinto Beans
2 ½ cups pinto beans
2 quarts of water
1 ½ teaspoon salt
1 garlic clove, smashed
Meat options:
1 Ham hock; 2 or 3 inch pieces of salt pork; 3 or 4 pork bones; 4 slices of bacon cut up into 2 inch pieces
Vegetarian option:
Whole onion cut in half with jalapeno, or 1 dried chile pequin
Directions:
1. Clean beans by taking out any rotted, or discolored beans.
2. Rinse beans thoroughly under cold water for a few minutes (beans will have dirt on them, even if you bought from the grocery store.
3. Put beans into an instant pot, crock-pot, or on the stove in a large stock pot.
4. Add your meat option, along with salt and crushed garlic clove.
Instant pot cooking directions: Cook for 1 hour and 30 minutes; let cool completely by venting. Do not open until silver level goes down, indicating it is safe to open.
Crock-pot cooking directions: Cook on high for approximately 1 hour, or until it starts to boil. Once they are boiling, turn heat to low and cook for 6 to 8 hours.
Stove top cooking directions: Cook on high until beans start to boil, turn heat to low and simmer for 6 to 8 hours, or until beans are tender and pink.

These refried beans are sometimes called runny, sticky and retefritos…and the restaurants will serve their refried beans based on the dish being ordered.
… but the first secret is that it all starts with a good pinto bean recipe.
For Terry’s favorite pinto beans recipe we’re gonna use:
– 2.5 C of Casserole Pinto Beans – these our are FAVORITE brand of beans
– 2 Garlic Cloves
– 2 Strips of Thick Cut Hickory & Mesquite Smoked Bacon
– About half J & B Salt Pork
_ A little more or a little less of each ingredient, to your preference
and
– 2 tsp of APC OG, you can salt to taste later
The cooking process for these is super simple in the crock pot. NO soaking needed. You just need to set it to high to get them simmering and check it every hour or so with a little stir. Depending on the crock pot these should take about four to five hours MAX!
And BONUS! In this video we’re also gonna show you what I call the THREE STAGES OF REFRIED BEANS! Stage 1 is the runny bean, perfect for scooping up with a Mexican spoon. Stage 2 is a little drier bean cooked with a little lard perfect for spreading on a tortilla or on a plate. And Stage 3 we add a little more yummy lard and take them to a little toasty finish, incorporating all of the yummy crispy goodness from the bottom of the pan. I love these for chalupas because they won’t make your tortillas soggy and the flavor, oh baby is several notches above the other two.
