How To make Chocolate Chili with Pinto Beans
-JUDI M. PHELPS (G.PHELPS1) 1 1/2 lb Lean pork; diced fine or
Coarsely ground lean pork 1 1/2 lb Lean beef; diced fine or
Coarsely ground lean beef 1/4 c Olive oil
5 md Onions; chopped coarse
2 c Tomato juice
3 c ;water
5 tb Chili powder; or to taste
3 tb Ground cumin
3 tb Oregano
3 tb Unsweetened cocoa powder
3 tb Cinnamon
1 ts Salt or to taste; optional
2 tb Garlic; chopped fine
3 tb White cornmeal
2 cn Pinto beans (1 lb each);
-drained and rinsed Onion; chopped Shredded lettuce Flour tortillas In a large saute pan or flameproof caserole, cook the pork and beef over moderate heat, stirring frequently, until both meats lose their pink color but are not browned, about 15 minutes. Transfer to a bowl and set aside. Heat the oil in the same pan until rippling and add the onions. Saute stirring occasionally, until soft and translucent, 10 minutes. Stir the reserved meat into the onions. Add the tomato juice, 3 cups of water, the chili powder, cumin, oregano, cocoa, cinnamon, and salt (optional). Blend. Turn the heat to high and bring to the boil; reduce heat and simmer, uncovered, for 1 hour. Stir occasionally. Taste for seasoning. Add more chili powder if you like your chili really searing. Cook 30 minutes longer. Stir in the garlic, cornmeal, and beans. Simmer for 10 minutes more until the beans are heated through. GARNISHES: Chopped onions, grated Parmesan, shredded lettuce, or sour cream may be used to garnish. Serves 8. SOURCE: The Brillian Bean Cookbook. -----

Betty's Chili Hot Beans -- Leftovers Series (2)
Betty demonstrates how to make Chili Hot Beans. This is a recipe that builds on the previous video in Betty's Kitchen, Homestyle Pinto Beans.
Chili Hot Beans
1 pound dry pinto beans, cooked in water in a large pot and salted to taste (You may substitute four 14.5-ounce cans of cooked pinto beans, undrained.)
2 tablespoons extra-virgin olive oil
1 large onion, chopped
6 medium cloves garlic, minced
3 tablespoons chili powder
1 tablespoon ground cumin seed
1 teaspoon dried oregano
1 teaspoon crushed coriander seed
salt, to taste, if needed
water, if needed
finely-chopped fresh onion
Tortilla Shells or Original Frito chips
Heat olive oil in a deep skillet over medium heat. When oil is shimmering, add onion and garlic. Cook until soft, stirring continually. Add chili powder, ground cumin seed, dried oregano, and crushed coriander seed. Place over medium-low heat and cook, stirring constantly, until onion and garlic have absorbed the herbs and spices. Add cooked onion and garlic to pot of beans. Bring to a boil over medium heat. Reduce heat and simmer for 30 minutes, stirring every 10 minutes. Add water, if needed, maintaining a sauce of desired consistency. Taste for salt and other spices and adjust, if desired. When Chili Hot Beans are done, ladle each serving into a soup bowl and top with finely chopped fresh onion. Use Tortilla Shells or Original Frito chips as an accompaniment. Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.

Chocolate and Peanut Butter Chili
Farmer Jim is back and ready to submit an entry to his local chili cook-off.
For his recipe you will need
1 medium yellow onion, diced
1 can green chilis mild
1 tablespoon cocoa powder
2 teaspoons smoked paprika
2 teaspoons chili powder
1 1/2 teaspoons oregano
1 1/2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 pounds ground meat
1 can diced tomatoes
1 cup stout beer
1 cup beef stock
2 cans pinto beans, rinsed
Mexican chocolate disk
2 tablespoons smooth peanut butter
