Ingredients
Oil
Corn Tortillas (Guerrero brand was used in this video)
Lobster salad recipe
1 Pound lobster meat
1 Jalapeño finely chopped
1/4 finely chopped white or yellow onion
1/4 finely chopped purple onion
1 cup mayonnaise (Hellmann's)
4 to 6 finely chopped celery stalks
1 Tbs white vinegar
Juice of 1/2 lemon + zest
1/2 tsp sugar
1/2 tsp celery seed
1/2 tsp salt (to taste)
1/2 tsp black pepper

Mexican Tostadas|Tostada Recipe|Vegetarian Tostadas|Beans Tostadas Recipe| Healthy Mexican Snacks
Tostada (Mexican recipe)
Ingredients:
Tostada (store bought) or use corn tortilla – shallow fry with some oil to make tostada
Salt to taste
1.5 cups pinto + black beans
1 large avocado
1 medium onion
1 medium tomato
1/4th cup bell peppers
1 small jalapeno
1-2 Thai chilis
1 Lemon
Oil for sautéing
3 tbsp sour cream
Mexican cheese (garnishing)
Taco sauce (Ortega or old el paso brand)
Steps:
1. Soak and cook beans:
a. Soak pinto and black beans for 3 hours. Add beans to pressure cooker, salt to taste and 2 cups water.
b. Pressure cook for 3 whistles at medium flame.
c. Take pan, heat oil. Once oil is hot add onions and sauté until translucent. Add baked beans, 2-3 tbsp water, taco seasoning, black pepper, taco sauce, red chili flakes and salt to taste. Mix well and cook for few minutes. Keep beans aside.
2. Sauté corn: heat oil in a pan. Add corn (fresh, canned, or frozen) to the pan and cook until you see dark spots.
3. Avocado cream sauce: Take food processor, add avocado, salt to taste, Thai chilis, fresh jalapenos, lemon juice and sour cream. Blend until smooth paste.
4. Pico de gallo: Take bowl, add onions, jalapenos (pickled), tomatoes, salt to taste, black pepper, lemon juice and mix well.
5. Assemble tostada: Take a tostado (warm it in a pan both sides). Add beans layer, spread avocado cream sauce generously, Pico de Gallo, corn, peppers, taco sauce and garnish with Mexican cheese. Top it off with fresh slice of jalapeno or avocado and serve!
