1/2 c Butter 10 Eggs 1/2 c Flour 1 ts Baking powder Salt; to taste 8 oz Green chili peppr; chop Ortego 1 pt Cottage cheese; small curd 1 lb Monterey Jack Cheese; grated Or 1/2 Cheddar & 1/2 Jack Melt butter in 9 x 13 pan in oven. Beat eggs lightly. Add flour, bkg pwd and salt; mix well. Add melted butter, cottage cheese, cheeses and peppers. Bake 400-15 minutes; then 350 - 35-40 minutes; or until firm. Ingredients: - ½ lb. Monterrey Jack Cheese (grated) - ½ lb. Cheddar Cheese (grated) - 5 - 6 Eggs - 1/3 cup flour - 1 cup Half & Half - 4 ozs chopped green chilies - 1 cup chopped ham - ¼ cup picante sauce
Steps: - Preheat oven to 375 degrees. - Butter a 10 inch pie plate. - Layer half the cheeses, scatter ½ of the chilies & ½ of the ham over the cheese. - Top with remaining cheese, chilies, & ham.
- Beat eggs, slowly mix in flour, then mix in half & half. - Pour egg mixture over cheese, etc. - Spoon picante sauce over top. - Bake for 45 minutes or until middle is set.

Ingredients
5 Eggs 1 cup Heavy Whipping Cream 1/2 tsp Sea Salt 1/4 tsp Cumin 1/4 tsp Garlic Powder 1/8 tsp Black Pepper 2 cups Cheddar Cheese, shredded 2 Small Cans mild green chiles 1 pkg. Bacon 1 Frozen Pie Crust
Instructions
Cook bacon in large pan to desired crispness. (keep in mind that it will bake in the Quiche for up to an hour, so slightly undercooked works great.) In mixer or by hand whisk 5 eggs, 1 cup heavy whipping cream, salt, cumin, garlic powder and black pepper. Place 1 cup of the shredded cheese in the bottom of the pie crust. Layer bacon crumbled or in strips on top of the cheese. Next layer two small cans of mild green chiles over the bacon. Add the last cup of shredded cheese over the green chiles. Pour the egg mixture on top of everything, remembering to press the cheese that has floated to the top back under the egg mixture with a fork. Bake at 325 for 45-60 minutes, being careful not to overbake. The finished texture will be creamy, but fully cooked.

Mexican Style Quiche - Must Try Original Recipe!!
I'm super excited about this Mexican-Style Quiche recipe!! So I've definitely had a Mexican food craving lately, although I would eat it everyday if I could. Recently, I made White Chicken Chili and since then I've had roasted green chilis on my mind; they seem to be making their way into a few of my recipes. This recipe is no exception! I was originally planning on doing a traditional style quiche when suddenly the idea of a Mexican style quiche with green chilis popped into my mind. I was instantly drawn to the idea (not to mention my mouth started watering). So I came up with this wonderful Mexican style quiche recipe. Ingredients:
1 - frozen pie crust 3 - large eggs 2oz - diced green chilis 2 - heaping tablespoons flour 1/2 - tsp salt 1/4 - white onion chopped 1 - cup half and half 1.5 - cups Mexican style cheese 3 - tbsp green enchilada sauce 1 - diced roma tomato optional chopped fresh cilantro, salsa, and sour cream for topping
Start by poking holes in frozen pie crust that has been properly thawed. Then place pie crust in an oven that has been preheated to 375° for 10-12 minutes until golden brown.
Sauté onions till translucent and then add green chilis and cook for several minutes.
Once pie crust is browned add a layer of cheese to the bottom of the crust and bake for several minutes to seal the bottom of the crust (this will keep the crust from getting soggy.)
Whisk eggs and half and half, then add sautéed onions and chilis.
Once the pie crust and cheese are done place half of the green enchilada sauce at the bottom of crust and then fill with the remainder of cheese holding back a small amount for topping. Then add half of the tomato.Pour egg mixture over the cheese and tomato. Then add the remainder of the tomato on top of the pie filling. Drizzle the rest of the green enchilada sauce on pie filling.
Bake for 35 minutes. Top with salt and let cool for 5-10 minutes.
