Hatch Green Chile Quiche with Sausage and Cheese
Here’s a simply delicious quiche recipe. Roasted Hatch green chiles, sausage, spice and cheddar cheese make this quiche one of the most irresistible dishes you’ll ever taste. Perfect for dinner, lunch, brunch or breakfast, this tasty quiche satisfies even the heartiest appetites.
Quiche is one of the most versatile recipes you will ever make. Once you’ve learned the basics of how to make a quiche, the variations and flavor combinations are limited only by your tastes and creativity.
In this video I show you how to make a quiche step by step, from start to finish. In this quiche recipe we use a frozen pie crust and a few other simple ingredients.

Hillbilly Jilly Hatch Green Chile Quiche with Sausage and Cheese
Ingredients
● 1/8 teaspoon nutmeg
● 1/2 teaspoon salt
● 1/2 teaspoon black pepper
● 1 cup grated cheddar cheese
● 1/2 cup chopped onion – sautéed
● 1/4 cup Hatch green chiles chopped (one 4 oz. can)
● 3 eggs
● 1/2 pound ground sausage – cooked
● 9-inch deep dish pie crust
Directions
1. Preheat oven to 350 degrees
2. Cook sausage and sauté onion
3. Add sausage first, then cheese to pie crust
4. Beat eggs just enough to blend yolks and whites
5. Add remaining ingredients to egg mixture and mix well
6. Pour egg mixture into pie crust making sure to spread evenly
7. Bake in oven at 350 degrees for one hour

Green Chili and Ham Quiche
Green Chile & Ham Quiche
Ingredients:
- ½ lb. Monterrey Jack Cheese (grated)
- ½ lb. Cheddar Cheese (grated)
- 5 - 6 Eggs
- 1/3 cup flour
- 1 cup Half & Half
- 4 ozs chopped green chilies
- 1 cup chopped ham
- ¼ cup picante sauce
Steps:
- Preheat oven to 375 degrees.
- Butter a 10 inch pie plate.
- Layer half the cheeses, scatter ½ of the chilies & ½ of the ham over the cheese.
- Top with remaining cheese, chilies, & ham.
- Beat eggs, slowly mix in flour, then mix in half & half.
- Pour egg mixture over cheese, etc.
- Spoon picante sauce over top.
- Bake for 45 minutes or until middle is set.

INGREDIENTS:
6 Eggs
1 cup of Half & Half (or milk)
1 1/2 cup Mozzarella Cheese (shredded)
1 cup Sharp Cheddar Cheese(shredded)
8oz Mushroom (sliced)
1 Shallot (sliced)
1/2 of a Roasted Red Bell Pepper (diced)
1/2 tbsp fresh Sage (minced)
1 cup frozen Spinach (thawed and drained)
1 tsp Red Chili Flakes
Salt, Black Pepper, and Garlic Powder (to taste)
INSTRUCTIONS:
•Sauté Mushroom and Shallot until cooked (about 3-4 minutes). Set aside to cool while you prepare the other ingredients
•In a 8/12 pan add the Spinach, Roasted Red Bell Pepper, Sautéed Mushroom and Shallot, Sage, Red Chili Flakes, Mozzarella Cheese, Cheddar Cheese, Salt, Pepper, and Garlic Powder to taste
•Mix all ingredients together well.
•Taste and add additional seasonings if needed
•Distribute the ingredients evenly in the pan and make sure not to pack them down
•In a mixing bowl combine 6 Eggs and 1 cup of alf and half (or milk)
•Mix until smooth in consistency
•Pour the the Egg and Half & Half into the pan
•Shake the pan lightly to distribute the egg mixture. (If you need to stir to get the ingredients even you can)
•Place the Quiche in the oven set to 350ºF/175ºC for 30-35 minutes and you can serve right away or next day to me is always better.

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.

CRUSTLESS QUICHE RECIPE
(makes 8 slices)
Ingredients:
1/2 cup red bell pepper, finely chopped (75g)
1/2 cup green onions, finely chopped (50g)
1/2 cup sweet potato, grated (75g)
1 cup cheddar cheese, grated, or any other melting cheese (100g)
5 eggs
1 cup cottage cheese (225g)
1/2 cup milk (120ml)
1 tsp mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/4 cup ground oats, or oat flour (25g)
NUTRITIONAL INFO (per slice):
158 calories, fat 8.6g, carb 7.9g, protein 12.3g
Preparation:
In a greased pan pan (I use 8-inch or 20cm cast iron skillet) layer down all the veggies and sprinkle with grated cheddar cheese.
In a blender add 5 eggs, cottage cheese, milk, mustard, salt, black pepper, ground nutmeg and ground oats. Blend until really smooth.
Pour the mixture over the veggies and move around with a fork to evenly distrubute the filling.
Bake in a preheated oven at 350F (180C) for 35 minutes.
Let it cool for 20 minutes, then slice into 8 equal pieces.
Serve and enjoy!
