Ingredients for green chile enchiladas
Chicken (I used 2 Chicken Breast)
Corn Tortillas
6-8 Poblano Chiles
7-9 Tomatillos
1 Bunch Cilantro (Optional- blend it with the chile and tomatillos )
2 1/2 Cups of Cheese ( I used Oaxaca)
*Mozzarella, Munster, or queso fresco
2 cups Chicken broth ( keep extra if the sauce is too thick)
2 Tablespoons Knorr Chicken Bouillon
1 Cup Heavy Cream (you can use: Milk or Half and Half)
1 Teaspoon butter
1/2 a medium onion (Optional for the filling)
Nutmeg (Optional)
Salt to taste
Garlic (Optional- blend it with the chile and tomatillos)

Ingredients:
7 peppers poblanos, hatch or Anaheim
6 eggs at room temperature
1/2 tsp black pepper
3/4-1 tsp salt
1/2 tsp baking powder
1/3 APF (all purpose flour)
1/4 cup milk or heavy cream
Optional: 1/4 onion, 2 roma tomatoes and 1 jalapeños or Serrano chopped and mixed together
Shredded queso Oaxaca or your favorite melting cheese
For the salsa:
4 roma tomatoes
Chile serranos or jalapeños
Chile de árbol
1/8 onion
1 garlic clove
1/2 tsp oregano
1/2 tsp black pepper
Salt I’m using 2 tsp

This delicious Pastel azteca is absolutely delicious to say the least, it's layers and layers of total goodness. This traditional dish is the casserole of choice when entertaining or just wanting something hearty and delicious. I alternate layers of gently fried corn tortillas with layers of salsa Verde, poblanos strips, corn grains ,onion strips, Mexican crema and Oaxaca cheese, it is best when made with a meat ingredient, I usually choose chicken but also love it with ground beef, I bake my Pastel Azteca casserole in the oven till bubbly, then serve it with a side salad. This dish is easy and absolutely fit for a king.
INGREDIENTS-----------------------
3 Lb boneless skinless chicken thighs
6 tomatillos
5 poblanos peppers (seeds and veins removed)
2 jalapenos (seeds removed)
1/2 medium onion (julienned for sauce)
6 garlic cloves (divided)
Cilantro (medium bunch)
1 Tbsp butter
1 Tbsp olive oil
1 tsp Better than bouillon
13 corn tortillas
18 oz Oaxaca cheese (grated)
Crema (Cacique Mexican table cream)
2 C. corn
1/2 tsp oregano
1/4 tsp ground cumin
oul for frying tortillas
1 &1/2 C. Chicken broth
Salt as needed
BLENDER INGREDIENTS-------------------
Tomatillos
1 poblano pepper
cilantro
2 jalapenos
1 C. chicken broth
INGREDIENTS TO BOIL CHICKEN---------
2 Celery ribs (cut in half)
1/4 tsp peppercorns
2 garlic cloves
1-2 tsp Better than bouillon (I used 1)
water to cover chicken by 1 &1/2 inches

Today I’m going to be sharing with you the easiest yet the most delicious tamales, now let me tell you this is a different and fun way to enjoy tamales,this recipe is perfect if you love tamales yet don’t enjoy the process of putting them together, because to be honest that is the hardest part about making tamales, spreading the masa on each husk. This recipe is perfect if you have a small family and want to make less tamales, or if you are making tamales all by yourself, regardless of the reason believe me this recipe is seriously DELICIOUS and the best part it takes half of the time! ☺️

I M P O R T A N T ⚠️
Taste the masa for salt after adding all the ingredients,
Make sure your masa floats, by doing so, you will make sure your tamales are soft, moist and fluffy!
Tip! Serve and enjoy as soon as you flip over, to store, wrap in plastic wrap!
Oil the Bundt pan with lard to prevent the masa from drying out!!!!!
Reserve 1 cup of sauce**

Ingredients: 12 cup Bundt pan
4-5 hydrated corn husks ❗️ Soak the corn husk overnight, or soak them with hot water while waiting for the meat to finish cooking, just make sure you clean them before soaking!
3-4 lbs beef instant pot or stovetop ❗️ stovetop will take between 2-3 hours!
Add 1/2 onion,4 garlic cloves,3 bay leaves, 5 whole cloves, salt, 2 tsp peppercorn, 8 cups water

10 New Mexico chile pods
2 chile anchos
5-6 chile arbol(Optional)
4 garlic cloves
7 small tomatillos
3/4 tsp cumin seeds
Salt I used 2 tsp
masa
4 cups instant corn masa for tamales
1 cup lard or shortening
2 tsp baking powder
6 cups of liquid (3 cups broth 3 cups water)❗️you can use all 6 cups of broth but warning!!!! masa will be extra oily, to prevent that use less shortening

Quiche Chile Poblano
2 tablespoons oil
3 garlic cloves, minced
1/2 cup chopped onion
¾ cup corn, rinsed
4 poblano peppers, roasted (see notes)
6 pieces of cooked bacon, chopped
1/3 cup chopped cilantro
2 tablespoons chopped jalapenos
1 cup mozzarella cheese
1/2 cup sour cream
5 eggs, whisked
Egg wash of 1 egg
1 pie crust
Growing up, my mom would make this quiche and it was a luxury in our household. The combination of the poblano peppers, bacon, and cheese is amazing. Poblano peppers are hotter than a bell pepper and less spicy than a serrano pepper.
I am finally back in Florida with my mom getting ready for the “winter” so we decided to make this dish. We went to Publix and I really wanted to make something I first tried this Quiche at La Unica in Mexico City where my parents live. Currently, they are quarantined here in Florida so I am enjoying the beautiful weather!
Preheat the oven to 400 degree F.
In a large skillet on medium flame, heat up the oil and wait for it to shimmer. Add the onion and cook for five minutes, until soft. Sprinkle some salt on the onions. Add the serrano peppers and the garlic for 2 minutes, stirring. Add the corn and cook for another 3-5 minutes. Remove from heat and add the sliced roasted poblano peppers, sour cream, and cilantro. Salt generously.
Place the bottom part of the pie crust on the bottom of a pie dish.
In a large bowl, whisk 5 eggs and then, add the poblano pepper mixture, chopped cooked bacon, and mozzarella. Combine and pour onto the pie crust. Complete the pie by adding the top and with a fork, dock the pie and prick the pie crust with a fork before baking. Brush egg wash onto the pie and bake for 40-50 minutes.
Roast the poblano peppers at 400 degrees F for 15-20 minutes, until the skin is peeling off. Then, place in towel and leave it to rest for 10 minutes. Peel off the skin, the top, and the seeds. Slice the peppers.
