How To make Chile Cheese Casserole
1 Can #2 whole kernal corn
2 tb Flour
1/2 lb Thinly sliced Cheddar cheese
2 Eggs, slightly beaten
1 Pkg. green chile
2 tb Oleo
1 c Milk
1/2 ts Salt
1 c Bread crumbs
1 Buttered cracker crumbs
Melt oleo, add flour, add milk and cook unti thick. Drain corn and add to eggs, and bread crumbs. Add to oleo, flour and milk mix. In a deep casserole, put half of the corn mixture, layer 1/3 cheese and peppers, make 2 more layers. Sprinkle cracker crumbs on top. Bake 45 min at 350 F. This dish may be frozen ahead of time.

Ingredients:
-2-3 Corn Tortillas
-2 Tucson Tamale Green Chile & Cheese Tamales (steamed to room temperature)
-4 Tbsp Green Chile Sauce (I used 505 Green Chile)
-½ cup Mexican Cheese
-2 Tbsp diced Onions
-Salt and Pepper to taste
-¼ cup Black Olives
Directions:
In a small greased ceramic dish, place a layer corn tortilla in the base. Place a Tucson Tamale Green Chile & Cheese Tamales on top and use the base of a glass to press it into the dish, ensuring it covers the corn tortillas. Scoop 2 Tbsp of green chile sauce and spread it around. Sprinkle in the onions, salt and pepper. Top with a layer of ¼ cup of cheese. Repeat the layers: tortilla, tamale, green chile, salt and pepper, and cheese. Top with black olive and a final layer of corn tortilla. Cover in plastic wrap and microwave for 3 minutes then let it cool in the microwave for another 3 minutes. Enjoy your mini tamale casserole!

In this video I am going to show you how to make my chile relleno casserole. It's just perfect for entertaining because you just throw everything in a 9 x 13 inch dish and pop it in the oven.
This chili relleno casserole serves quite a few depending on how small you cut the pieces.
It's easy to make and only has a few ingredients like green chiles which are mild, milk, cheese, flour, eggs and salt.
This is a favorite dish of my family as we make this every Christmas eve as part of our Mexican dinner. We love it!
You can also serve this casserole for breakfast, lunch or dinner. The flavors are rich and it is definitely a comfort food that is quick and easy.

Green Chile & Cheese Tamale Casserole Recipe by Tucson Tamale
Check out this delicious Green CHile and Cheese Tamale Casserole with a kick. Perfect, quick and easy recipe for hosting guests are cooking for the family. Make this gourmet tamale recipe in just 50 minutes.
Ingredients:
-6 Green Chile and Cheese Tamales (Steamed to room temperature)
-2 cups Green Chile Salsa
-½ cup White Onion
-½ cup Sweet Corn
-1 bag of Mexican Cheese
-½ cup Black Olives
-2 tsp salt
-2 tsp pepper
Directions:
First preheat the oven to 350 degrees. Grease a casserole dish and lay the tamales flat. Use the base of a glass to flatten the tamales so they cover the base of the dish. Cover the tamales with half the Mexican cheese. Then pour the green chile sauce on top. Next sprinkle the onion and sweet corn and add the salt and pepper. Finish with another layer of Mexican cheese and top it with black olives. Finally bake for 30 minutes and serve immediately.
