Hello my Friends, welcome to my Southern Kitchen; hope all of had a great Thanksgiving, staying safe and healthy!!
Today is International Waffle Day around the World! I love Waffles weather it is Buttermilk, Blueberry, or Belgian, so amazingly delicious!
Strawberry is one of my favorite flavor of Waffles from my Childhood so I am making Strawberry Waffles using fresh Strawberries! Moist, crispy, tender, and full of Strawberry flavor; the perfect Sweet treat for Easter Brunch and great Breakfast to serve for the Family on the weekend or any time; everyone will love and enjoy this!

Ellen’s Homemade Whipped Cream:
1 3/4 cups self rising or all purpose flour
1 tablespoon baking powder (if using all purpose flour)
1/2 teaspoon salt (if using all purpose flour)
2 to 3 tablespoons white sugar
1 1/2 cups whole milk, room temperature
2 large or extra large eggs, (yolks and whites separated)
4 tablespoons unsalted butter, melted and cooled
1/4 cup canola or vegetable oil
1 (5.3 ounce) carton vanilla Greek yogurt, room temperature
1 teaspoon pure strawberry extract
1 cup fresh strawberries, rinsed and diced
Melted butter, for brushing the waffles
Maple syrup, for serving
Whipped cream, for garnish (optional)
Sliced strawberries and whole strawberry, for garnish (optional)
Makes 2 to 3 Waffles
In a medium bowl, add the egg whites and whip on high speed until stiff white peaks form and set aside. In a large bowl, add the flour (baking powder and salt, if using), and sugar; whisk or sift together until well combined. Make a well in the center of the bowl and add in the whole milk, egg yolks, melted butter, oil, vanilla yogurt, and strawberry extract; using a rubber spatula, fold or stir together until well incorporated (batter should be lumpy). Add the egg whites and diced strawberries into the batter and gently fold them in until combined. Let the batter rest while you heat up the waffle maker. Spray the waffle maker with cooking spray or brush it with melted butter. Scoop the batter into the waffle maker and just cook the waffles according to the instructions on the waffle maker until golden brown. When the waffles are done cooking, brush them with some melted butter while they are stir hot and in the waffle maker. Place the waffles onto a plate, serve immediately with a generous amount of maple syrup, whipped cream, sliced strawberries, and whole strawberry (if desired) and enjoy!

2pcs Egg
20ml (4 tsp) Milk
30g (3.3 tbsp) All-purpose flour
1.25ml (1/4 tsp) Vanilla extract (optional)
25g (2 tbsp) Sugar
Important tips
1. I used the all-purpose flour in here, you can also use cake flour to make
2. There are 25 grams (2 tbsp) of Sugar in total. Split it into 3 times to add.
3. Whip the egg whites to dry peaks, so the pancakes will come out thicker
4. All the way low heat, about 5 minutes on each side, you can either add a small spoonful of water or not.

1 1/2 cups rice flour
1/2 cup tapioca starch
1/2 cup all-purpose flour
1 Tbsp baking powder
1/4 tsp salt
2 large eggs
1/2 cup sugar
1 1/2 cups coconut milk
2 Tbsp butter
3/4 tsp Pandan paste
Yields: 5 waffles, approximately 6 1/2-inch diameter
