How To make Chicken Rockefeller
4 Chicken breasts -- skinless
-and boneless 6 Green onions
chopped
4 cl Garlic :
chopped
1 t Butter softened
2 1/2 c Frozen spinach :
drained
-and squeezed dry 2 ts Dill weed
Salt to taste Pepper to taste 1/2 c Crumbled feta cheese
16 Sheets filo pastry
1 c Butter, melted
Lightly pound out each chicken breast with meat mallet. Set aside. Saute green onions and garlic in the teaspoon of butter until onions are tender. Add drained spinach, dill, salt and pepper. Cook until mixture is thoroughly heated. Add crumbled feta cheese. Divide into four equal parts. Place this mixture in the center of each chicken breast and roll up. Place on greased pan and bake at 350 degrees for 20 minutes. Butter each sheet of filo on one side with
melted butter; place on top of each other, making four stacks, each four sheets high. Place each cooked and stuffed chicken breast in the middle of the lower end of one stack. Fold over sides and roll up. Brush with melted butter. Place on greased pan and bake at 375 degrees until golden brown. From: Nicklow's Restaurant, Crystal, MN - Pub. in Strib.

Summer is right around the corner & we have seafood on the brain! ???? Treat yourself to Chef Greg's variation of classic Oysters Rockefeller: oysters on the half-shell topped with a rich, melty mixture of cheese & spinach! ???? See the full recipe below. ????
INGREDIENTS
• Fresh oysters
• 16 oz. spinach
• 10.4 oz. Boursin cheese
• 1/4 cup Parmesan cheese
• 6 cloves garlic, chopped
• 2-3 tbsp. Colden's Freakin' Greek Rub
• 2-3 tbsp. Ben's Heffer Dust
• 1/4 cup bread crumbs
INSTRUCTIONS
1. Preheat your REC TEC to FULL.
2. Sauté spinach until soft. Drain excess moisture.
3. Add spinach, Boursin cheese, Parmesan cheese, garlic, Colden's Freakin' Greek Rub, & Ben's Heffer Dust to mixing bowl. Mix thoroughly.
4. Add bread crumbs & mix.
5. Open oysters & remove top shell. Place half-shells on baking tray.
6. Add mixture to top of oysters. Sprinkle with more bread crumbs.
7. Pour melted butter over oysters & sprinkle with Parmesan cheese.
8. Place on REC TEC and cook until brown & bubbly, about 20-25 minutes.
9. Remove & sprinkle more Parmesan cheese to your liking. Enjoy!
