►4 cups cooked chicken, shredded
►6 Tbsp unsalted butter
►1/3 cup all-purpose flour
►1 medium yellow onion, (1 cup chopped)
►2 carrots, (1 cup) thinly sliced
►8 oz mushrooms, stems discarded, sliced
►3 garlic cloves, minced
►2 cups chicken stock
►1/2 cup heavy cream
►2 tsp salt, plush kosher salt to garnish
►1/4 tsp black pepper, plus more to garnish
►1 cup frozen peas (do not thaw)
►1/4 cup parsley, finely chopped, plus more to garnish
►1 egg, beaten for egg wash

This recipe calls for two cups of frozen mixed vegetables, which is the easiest way to prepare it, but don’t let that limit you. Whether it’s summertime and you want to use up some fresh veggies from your garden, or you just want to clean out your freezer or refrigerator, this recipe is easily customizable.

Double Crusted Chicken Pot Pie
Pure comfort in a pie plate. The pastry dough can be made a day or two ahead of time. Rotisserie chicken and frozen vegetables work great for the filling. Ingredients are listed below:
For the crust:
2 1/2 cups all-purpose flour
1 1/2 teaspoons salt
12 Tablespoons (1 1/2 sticks) cold butter, diced
1/2 cup sour cream
1 large egg, beaten
For the white sauce:
1/3 cup butter
1/3 cup flour
1/2 teaspoon salt
Grinds of black pepper
1 teaspoon garlic powder (or to taste)
1 teaspoon dried tarragon (or to taste)
2 1/2 cups milk, chicken stock, or a combination of the two
For the chicken and vegetables:
A 10-ounce bag frozen peas and carrots
1/2 to 1 cup diced onion (frozen works great here)
2 cups (or slightly more) cooked, cut up or shredded chicken
For glazing the pastry crust:
1 beaten egg
Bake at 450°F on the lowest oven rack for 18-20 minutes, then lower the temperature to 375°F and continue baking until the pastry colors deep golden-brown -- 12-15 minutes. Allow the pie to cool for at least 45 minutes before serving.
