How To make Chicken Pie
4 c Cooked chicken 1 c Soft bread crumbs
2 ts Salt 2 c Chicken broth
1 c Celery, finely chopped 2 tb Parsley, minced
4 ea Eggs, slightly beaten
Cut chicken into rather large pieces. Alternate layers of chicken, celery, crumbs, and parsley in a greased casserole. Add salt and eggs to the chicken broth, mix thoroughly, and pour over the chicken mixture. Bake in pan of hot water in moderate oven, about 350 degrees, for 1 hour or until mixture does not adhere to knife blade. Cover with Drop Biscuits -----

1 diced yellow onion
1 cup diced celery
1 cup peeled and diced carrots
1 cup frozen peas
1 cup diced bella mushrooms
6 tbsp butter
1/3 cup flour
1 tbsp italian paste

2 tsps better than bouillon chicken base
1-2 tsps Worcestershire sauce
1 egg or 2 tbsp melted butter (to brush pie crust)

SPECIAL CHICKEN PIE
Chicken pie
Makes 14 medium pies
Pie Dough:
* 500g all purpose flour/4 cups
* 250g butter (2 sticks + 2 tablespoons)
* 1½ teaspoon salt (8g)
* ½ cup water + 2 tablespoons
To boil chicken:
* 620g chicken (2 medium chicken breast)
* Small Onion
* 1/2 teaspoon salt
* 1 teaspoon chicken seasoning
* 1 cup water
*
To make the filling
* 2 tablespoons oil
* 1/4 cup chopped onion
* 1 teaspoon minced ginger
* 2 cloves garlic
* Shredded chicken
* 1 cup shredded cabbage
* 1/2 cup shredded carrot
* 1 chopped scotch bonnet pepper
* 2 tablespoons all purpose flour
* 1/2 cup water
* 1/2 cup chicken broth
* 1 teaspoon paprika
* 1/4 cup chopped green onion
Additional:
* extra flour for dusting
* 1 beaten whole egg for egg wash
