Chicken Burger Patty
Recipe in English:
Ingredients:
-Chicken breast boneless ½ kg
-Chicken thigh boneless ½ kg
-Lehsan powder (Garlic powder) 1 tsp
-Paprika powder ½ tbs
-Dried thyme 1 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Dried parsley 1 tsp
-Chicken powder 1 tbs
-Soy sauce 2 tbs
-Anda (Egg) 1
-Doodh (Milk) ¼ Cup
-Bread 4-5 slices
-Breadcrumbs 1 Cup or as required
-Maida (All-purpose flour) ½ Cup
-Cornflour 4 tbs
-Chawal ka atta (Rice flour) 4 tbs
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black Pepper powder) 1 tsp or to taste
-Anda (Egg) 1
-Water ½ Cup or as required
-Cooking oil for frying
Assembling:
-Tomato ketchup
-Salad patta (Lettuce leaves)
-Tamatar (Tomato) slices
-Pyaz (Onion) rings
-Mayonnaise
-Cheese slice
-Jalapenos
-Mustard sauce
Directions:
-In a chopper,add chicken boneless,garlic powder,paprika powder,dried thyme,black pepper powder, salt,dried parsley,chicken powder,soy sauce,egg,milk and chop until well combined.
-Add bread slices and chop again.
-Grease hands with oil,take a mixture (80g) and make a ball.
-With the help of round cutter (grease with oil),press the mixture and set into patty shape & freeze for 6-8 hours (makes 18 Burger patties).
-In a bowl,add breadcrumbs & set aside.
-In a bowl,add all-purpose flour,cornflour,rice flour,salt,black pepper powder and mix well.
-Add egg,water and whisk well to make a smooth batter.
-Now dip burger patty in prepared batter then coat with breadcrumbs.
-Can be stored in freezer for up to 1 month in airtight box/zip lock bag.
-In frying pan,heat cooking oil and fry burger patties on low flame from both sides until golden brown.
Assembling:
-On burger bun,add tomato ketchup,lettuce leaves,tomato slices,onion,mayonnaise,burger patty,cheese slice,jalapenos,mustard sauce and top with another bun & serve!

-Round cutter (grease with oil) ki madad sa mixture ko press karein aur patty ki shape bana lein aur 6-8 hours kliya freeze ker lein (makes 18 Burger patties).
-Bowl mein breadcrumbs dal ker side per rakh dein.
-Bowl mein maida,cornflour,chawal ka atta,namak aur kali mirch powder dal ker ache tarhan mix ker lein.
-Anda aur pani dal dein aur ache tarhan whisk ker ka smooth batter tayyar ker lein.
-Ab burger patty ko tayyar batter mein dip karein aur breadcrumbs mein coat ker lein (makes 17-18).
-1 month tak airtight box/zip lock bag mein dal ke freeze ker saktay han.
-Frying pan mein cooking oil garam karein aur burger patties ko halki ancch per golden brown hunay tak fry ker lein.
Assembling:
-Burger bun per tomato ketchup,salad patta,tamatar slices,pyaz,mayonnaise,burger patty,cheese slice, jalapenos aur mustard sauce dal dein aur top bun rakh ker serve karein!

-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lemon juice 2 tbs
-Tandoori masala 1 & ½ tbs
-Chicken fillet 300g
-Cooking oil 2 tbs
-Makhan (Butter) 3 tbs
-Pyaz (Onion) chopped 1 large
-Lehsan (Garlic) crushed 1 tsp
-Hari mirch (Green chillies) chopped 2
-Maida (All-purpose flour) 2 tbs
-Olper’s Milk ½ Cup
-Olper’s Cream ½ Cup
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Paprika powder ½ tsp
-Soy sauce 1 tbs
-Hara dhania (Fresh coriander) chopped 2 tbs
-Puff pastry 500g
-Anda (Egg) whisked 1
Directions:
-In a bowl,add ginger garlic paste,lemon juice,tandoori masala & mix well.
-Add chicken fillet & mix well,cover & marinate for 15 minutes.
-In a frying pan,add cooking oil,marinated fillet,apply remaining marinade & cook on medium flame from both sides for 3-4 minutes,cover & cook on low flame for 6-8 minutes then cook on high flame until it dries up.
-Let it cool then shred with the help of fork & set aside.
-In the same frying pan,add butter & let it melt.
-Add onion,mix well & sauté until translucent.
-Add green chillies & mix well.
-Add garlic & mix well.
-Add all-purpose flour,mix well & cook for a minute.
-Add milk,mix well & cook until it thickens.
-Turn off the flame,add cream & mix well.
-Turn on the flame,add red chilli crushed,salt,cumin seeds,paprika powder,soy sauce,fresh coriander, mix well & cook on low flame for 1-2 minutes.
-Now add shredded chicken,mix well & cook for 2-3 minutes.
-Let it cool.
-On a clean working surface,sprinkle dry flour & roll out puff pastry with the help of rolling pin.
-Cut in desired shape by using round cookie cutter.
-Apply water,add prepared chicken filling in the center & flip another puff pastry on top to make a patties.
-Gently press to seal & apply egg wash on top (makes 6).
-Air fry in preheated air fryer at 180 C for 12-15 minutes.
-Serve to tomato ketchup!

-Frying pan mein cooking oil,marinated chicken aur remaining marinade dal dein aur darmiyani ancch per dono sides sa 3-4 minutes kliya paka lein aur dhak halki ancch per 6-8 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Thanda ker lein phir fork ki madad sa shred ker lein & side per rakh dein.
-Us he frying pan mein makhan dal ker melt ker lein.
-Pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein.
-Hari mirch dal ker ache tarhan mix karein.
-Lehsan dal ker ache tarhan mix ker lein.
-Maida dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Doodh dal ker mix karein aur garha ho janay tak paka lein.
-Chulha bund ker dein aur cream dal ker ache tarhan mix ker lein.
-Chulha on karein,lal mirch crushed,namak,zeera,paprika powder soy sauce aur hara dhania dal ker ache tarhan mix karein aur halki ancch per 1-2 minutes kliya paka lein.
-Ab shredded chicken dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Thanda ker lein.
-Clean working surface per maida chirak dein aur puff pastry ko rolling pin ki madad sa bail lein.
-Cookie cutter ki madad sa desired shape mein cut ker lein.
-Pani laga lein aur center mein tayyar chicken filling rakh dein aur upper sa puff pastry rakh ker patties tayyar ker lein.
-Gently press ker ka seal ker lein aur egg wash laga lein (makes 6).
-Preheated air fryer mein 180C per 12-15 minutes kliya air fry ker lein.
