How To make Chicken Paprikas
4 Tbsp Freshly Rendered Lard
Or
Oil 1 Tbsp Hungarian Paprika
3 Yellow Onions :
Chopped
3 1/2 Lbs Chicken, Cut Into 8 Pieces
1 Cup Chicken Stock
1 Medium Tomato Diced
2 Anaheim Or Cubanelle Peppers,Seeded :
Coarsely
C hopped 1 Tsp Salt
1/8 Tsp Fresh Ground Pepper
2 Cloves Garlic -- Crushed
Thickening 1/2 Cup Sour Cream
2 Tbsp flour
Heat a 6 quart heavy stove-top casserole and add the lard or oil and paprika. Saute the paprika for about 1 minute and add the onions. Saute for a few minutes and add the remaining ingredients except for the thickening. Bring to a simmer and cook, covered for about 45 to 60 minutes (all is tender). remove the chicken pieces and set aside. Mix the sour cream and flour well with a wire whisk. Add 1 cup ofthe juices from the pot to the cream and stir well to avoid lumps. Stir this mixture into the pot and stir while it thickens. return the chicken to the pot and restore the heat. Serve with noodles or Hungarian dumplings.

Chicken Paprikash recipe:
¼ cup clarified butter or oil
1 whole chicken separated into 8 pieces
1 large yellow onion, minced
1 red bell pepper diced
4 tbsp tomato paste
1 tbsp all-purpose flour
3 1/2 Tbsp Hungarian sweet paprika, plus more for garnish
3 1/2 cups chicken stock (add more for a more runny sauce)
2 tbsp sour cream to serve with each individual plate
Salt and pepper to taste
Hungarian Nokedli Noodles:
4 whole eggs
3 tbsp sour cream
1 cup +2 tbsp all-purpose flour
1 tsp salt

Chicken Paprikash -- Hungarian Chicken Stew
3-4, T. lard or bacon fat or oil
1 T. Hungarian paprika
3 yellown onions peeled & chopped
1 3 1/2-pound chicken, cut into 8 pieces or 8 drumsticks
1 C. chicken broth
1 med. tomato, diced
2 Anaheim or Cubanelle peppers, seeded & chopped
1 t. salt
1/8 t. black pepper
2 cloves, garlic crushed
6-8 mushrooms, fresh or dried
1/2 C. sour cream
2 T. flour
Heat a dutch oven and add lard or oil and paprika. Sauté for about 1 minute and add the onions. Sauté a few more minutes or until the onions become translucent and add remaining ingredients except the sour cream & flour. Bring to a simmer and cook covered 45 min. to and hour or until the chicken is tender. Remove the chicken pieces and set aside. Mix the sour cream and flour well, using a wire whisk. Add 1 cup of the gravy from the pot to the cream and stir well to avoid lumps. Stir this mixture into the pot and stir while it thickens. Return chicken to pot to restore heat and serve with Hungarian Dumplings/nokedli.
