The Connected Kitchen - Ole Mole Sauce Recipe
This is our version of a delicious mole sauce. Use it to braise chicken, beef or in a vegetarian stew. The cocoa, dried chilies, and dried mushrooms give it a very rich, savory and smoky flavor. We hope you enjoy it as much as we do.
Ingredients:
• Dried Mushrooms (1/2 cup)
• Cocoa Nibs (1/4 cup)
• Dried Chilies (gaujillo, pasilla, ancho) (12 chilies, seeds & stem removed)
• Dried Cherries (1/4 cup)
• Blanched Almonds or Pistachio (1/2 cup)
• Sesame Seeds (1/2 cup)
• Ground Coriander (1 tbsp)
• Dried Oregano (1 tbsp)
• Cinnamon Stick (2 sticks)
• Onion (1 cup chopped)
• Garlic (1 clove)
• Tomato Paste (2 tbsp)
• Fresh Thyme (2 tbsp)
• Olive Oil
• Sea Salt
• Black Pepper
Method:
Prep stage: In a dry pan toast all the dried chilies until fragrant.
1. Cover dried mushrooms, chilies, cherries, pistachio, and sesame seeds with 2 cups of boiling water. Let steep for 5 to 10 minutes.
2. In a medium pot over medium heat, add oil. Add chopped onion and garlic. Cook for 3 minutes
3. Add tomato paste, coriander, oregano and cinnamon stick, stir through and cook another 2 minutes.
4. Cover with steeped ingredients including liquid. Cover with another two cups of water or chicken stock. Bring to a simmer and cook 30 minutes. Remove cinnamon sticks and blend everything until smooth.
5. Continue to simmer puree another hour, add liquid if it becomes too thick. Season to taste.

Linda’s Chicken ‘Ole -0- WW points, low calorie, high protein, very easy
LINDA'S CHICKEN OLE'
Very easy, healthy spicy chicken and rice cauliflower dish. Lots of protein, low calorie, -0- WW point per huge serving. Makes 3 large servings. Sooooo good. ENJOY!
INGREDIENTS:
* 1 uncooked boneless skinless chicken breast (-o- points)
* 1 can of corn (-0- points)
* Ro Tel Diced Tomatoes & Green Chilies, Original 11 1/2 oz can (-0- points)
* 2 cups-Green Giant Riced Veggies Cauliflower (or any other brand) (-0- points)
* 1 onion
INSTRUCTIONS:
Salt and pepper chicken breast then fry in a large skillet with a little bit of olive oil over medium heat. Cover skillet and flip a few times until cooked, or buy cubed chicken breasts already cooked. Remove chicken and cut it up in dice size pieces and set aside for now. In the skillet, Add 1 cup of largely diced onion into skillet and lightly saute. Add the Rotel tomatoes and 1 cup of drained canned corn (or frozen corn), then add the cauliflower rice and stir around lightly. Simmer for a few minutes, stirring often. Add diced cooked chicken and stir together.Simmer together for a couple of minutes. Enjoy!

Another delicious Crocktober meal!!! This one is Chicken Ole’. It is so cheesy and good. I hope you enjoy it!

Slow Cooker Chicken Olé
10 ¾ oz. can cream of mushroom soup
10 ¾ oz. can cream of chicken soup (I used 2 can of this instead of cream of mushroom)
1 cup sour cream
2 Tbsp. grated onion
1 Tbsp. taco seasoning
1 ½ cups grated cheese of your choice (I probably used more)
12 flour tortillas, each torn into 6-8 pieces
3-4 cups cubed, cooked chicken
Jar of salsa
½ cup (or more) grated cheese
1. In separate bowl, combine soups, sour cream, onion, taco seasoning and 1 ½ cups of cheese.
2. Place one-third of each of the following in layers in slow cooker: torn tortillas, soup mixture, chicken and salsa. Repeat layers 2 more times.
3. Cover. Cook on Low 4-5 hours. (This recipe does not respond well to cooking on High.)
4. Sprinkle with remaining cheese. Cover and cook on Low another 15-30 minutes. (15 was good for me.)
5. The recipe says to serve with tortilla chips and lettuce but we didn’t need the chips because of the flour tortillas that was cooked in this dish. Enjoy!
