The Best Chicken Mozzarella - 5 Ingredients!
Chicken Mozzarella...an easy one skillet meal loaded with Italian flavor! The trick to this quick 1 skillet weeknight meal is using my favorite jarred marinara sauce and I show you how to keep the chicken juicy!

Ingredients
2 Chicken Breast (12 ounces total)
1 teaspoon Italian Seasoning, Divided
Salt and pepper
1 24oz Rao's Marinara (or your favorite sugar-free marinara)
1 Cup Shredded Mozzarella Cheese
2 Tablespoons Avocado oil

Oven Safe Skillet
Instructions
Place the chicken breast on a cutting board and using a sharp knife, cut each breast in half lengthwise (see notes) resulting in 4 chicken cutlets.
Season each side of the chicken breast cutlets with salt, pepper, and 1/2 teaspoon of Italian seasoning.
Add the avocado oil to a large oven proof skillet (such as cast iron or stainless steel) and heat over medium-high heat. Brown each side of the chicken cutlets and cook until a meat thermometer reads an internal temperature of 150F.
Remove the chicken from the pan to a plate and set aside. Pour the marinara in the skillet and scrape any browned bit from the bottom of the pan with a spatula. Return the chicken to the pan and top each cutlet with 1/4 cup of shredded mozzarella cheese, followed by the rest of the Italian seasoning.
Trun your oven on HI Broil and set the rack to the middle of the oven. Place the mozzarella chicken in the oven and broil until the cheese becomes browned and bubbly...about 5-8 minutes
Remove from the oven and check for proper chicken temperature of 165F using your meat thermometer. Serve.
Notes
To cut the chicken in half lengthwise - place one hand flat on top of a chicken breast and, holding your knife parallel to the cutting board, slice it horizontally from the thick end to the thin end.
Avocado Oil - Better for searing as it has a higher smoke point than olive oil or butter.
Avoid Overcooked Chicken - Sear the chicken breast until the internal temperature is around 150F. This will allow us to continue to cook the chicken in the oven without it over cooking.
Oven Safe Skillet - If you do not own an oven safe skillet, you can brown each chicken cutlet in any skillet you have and pour the marinara sauce into a casserole dish, followed by the browned chicken and the cheese. Continue with step 5.
Checking for Doneness - To properly check the meats internal temperature, you need to check the temperature of the center of the meat.

I got inspired by Gordon Ramsay's chicken mozzarella recipe so I really hope you like my version, otherwise, I hope he won't find out. I kind of dread his scoldings.
Today's recipe is a delicious and easy mozzarella chicken in tomato sauce.
Now I have to tell you something from the very beginning. For this dish, I got my inspiration from Gordon Ramsay's chicken mozzarella recipe and I added it a Blondie's touch (tomato sauce, of course).
I think it's one of the best recipes with mozzarella cheese.
Well, chicken with mozzarella and tomato... a delish made with simple ingredients... what's not to love about that, right?
Chicken in tomato sauce is one of the most popular recipes because you can make it for parties, date nights, holidays, Christmas, you name it. It's the perfect recipe for any occasion, or even if there's no occasion at all and you just want to grab a quick lunch or dinner.
Another great thing is that you can make the mozzarella chicken in just one pan and in less than 30 minutes. How good is that?!

Stuffed Chicken Breast With Mozzarella, Sun Dried Tomatoes and Basil
I use this stuffing technique for chicken, steak and pork chops. Be creative about what you put inside: try sautéed spinach and mushrooms or capers, parsley and lemon zest.
Serves 4
6 sun dried tomatoes halves in oil, drained and chopped
2 ounces fresh mozzarella, chopped
10 large basil leaves, chopped
Zest from 1 lemon
2 8-ounce boneless, skinless chicken breasts, trimmed of extra fat
2 teaspoons olive oil
Salt and pepper
Preheat oven to 350 degrees. In a small bowl, mix together tomatoes, mozzarella, basil, and lemon zest. Taste and season with salt and pepper if desired.
Using a pairing knife, start a thickest part of chicken and make a pocket lengthwise in the chicken. Using fingers, stuff chicken with mozzarella filling. Repeat with remaining chicken breast. Season chicken with salt.
Heat a medium stainless steel skillet over medium high heat. Add olive oil and once hot, add chicken breasts. Sear on both sides until brown. Place chicken on a rimmed baking sheet and bake until centers are hot and reach 160 degrees on an instant read thermometer, about 15 to 20 minutes. Let chicken rest 5 minutes. Slice chicken into rounds and serve hot.
