How To make Chicken Merengo
3 lb Chicken in serving pieces
Salt and pepper Flour 1/4 c Butter
1/4 c Olive oil (not virgin)
1 Garlic cl, minced
2 T Flour
1 lb Can tomatoes
1 c Dry white wine
6 oz Can sliced muchrooms
Sprinkle chicken pieces with salt and pepper and roll in flour. Heat butter and oil in lg skillet. Add chicken and brown on all sides. Remove from skillet and place pieces in single layer inn a shallow baking dish. Add garlic to skillet and saute till soft. Stir flour into pan drippings, add tomatoes broken up with juice and wine and stir briskly over med-high heat until sauce bubbles and thickens. Add mushrooms.
Pour sauce over chicken. Bake in a preheated 350 oven for 40 to 45 min or till chicken is tender. Serve sprinkled with finely chopped chives.
Note: We (myself and five siblings) all loved this dish when we were kids. It was only when I grew up and made it myself that I realized what a sophisticated yet easy dish it was. My mom always doubled the recipe to feed our large gang and I think it freezes good as well. No idea where the recipe originated, though it more than likely was taken from a 60's copy of Women's Day magazine.

The Historical Chicken Marengo is a french dish from the Corsica region. The dish was named after the Battle of Marengo to celebrate the victory of Napoleon Bonaparte. This 18th century old dish is an easy yet delicious recipe marked by richness and fullness of flavor of the sauce and tender juicy chicken.
Ingredients
2 portions Chicken Maryland
½ cup Plain Flour
¼ cup Olive Oil
1 tbsp. Chopped Garlic
1 tbsp. Shallots
1 cup Button Mushrooms
¼ cup Pitted Kalamata Olives
¼ cup Pitted Green Olives

Chicken Marengo is a comforting delicious chicken meal. This recipe has many levels, but you can simplify if you want a quicker meal by skipping levels.
The legend has it that after the battle, Napoleon was famished and understandably wanted dinner, I would too! The chef managed to scrounge local ingredients from the countryside which included a chicken, eggs, tomatoes, truffles, and river crayfish. Et voila! Chicken Marengo was born! Napoleon Bonaparte liked it so much that it became his lucky dish. So today this will be your lucky dish, using shrimp or prawns instead of crayfish, and mushrooms instead of truffles. But feel free to replace with crayfish and truffles if you can afford them!
If you’re in a hurry, you could simply make the chicken recipe on its own, without the shrimps, eggs and toast. That alone is still an amazing dish that can be made in under 40 minutes.
