1 Chicken; skinned & cut up 4 Yams, cut into chunks; leave 1/4 c Rum; (optional) 2 Raisins 1 Onion; white or yellow 1/3 Brown sugar; (to taste) 2 Cinnamon 3 Ground ginger 2 Thyme 3 Butter or margarine Approx 1/3 cup water In oven casserole, put chicken. Pour rum over chicken. Let sit 10 minutes. Sprinkle with thyme. Pour in water. Place yams around chicken. Sprinkle yams and chicken with cinnamon. Toss in raisins. Sprinkle all with ginger and brown sugar. Cover and cook at 350 degrees for 1/2 hour. Uncover and check that gravy is covering meat. Add water as necessary. Dot yams with butter or margarine. Re-cover and cook another 1/2 hour or until yams are tender -----

IHC's Lorelei Legaspi, PHR/CNA as part of the Special Diabetes Program for Indians (SDPI) walks us through using leftover turkey, chicken, beef or pork from holiday feasts to create a delicious and nutritious post holiday meal/snack.
Quesadilla Recipe: 4 corn tortillas 3 oz Mexican 4-cheese blend 8 oz diced chicken cooked chicken breast/pork or beef 1/4 cup diced red onion 1 cup baby spinach 1/3 cup salsa 2 stalks green onions 1/4 cup cilantro 1/2 Jalapeno pepper (optional) 1/2 tbsp butter 2 tbsp olive oil 1/8 tsp cumin 1/8 tsp paprika 1/8 tsp oregano salt to taste.
DIRECTION: 1) Heat a large non-stick skillet 2 tbsp olive oil. Saute diced chicken, onions, spinach, some green onions, jalapeno peppers for 2-3 minutes. Season with oregano, paprika , cumin & salt. Set aside. 2)Heat another pan over medium heat. Add corn tortillas to the pan and top with grated cheese, leaving a small border around the edges. Cover w/ lid and let it cook for one to 2 minutes until the cheese is melted. *Use melted butter if desired. 3) Add sautéed mixture to the tortillas 4) Top tortillas w/ another tortillas and gently press down. Cook for 2-3 minutes per side or until browned and crispy. Let the quesadilla cool slightly and then cut into wedges if desired. Enjoy!!
