Anchovy is an essential foundation for making a great broth in Korean cuisine. It is often used along with dried kelp. However, we typically discard them after extracting the flavor, so it’s quite a waste of food and also nutrition. Anchovy is a super great source of calcium. The more famous version of 'pasta con le sarde' from the Palermo area of Sicily contains pine nuts and raisins and no tomatoes. This recipe is typical of the Caltabellota area.
