How To make Chicken Liver Marsala
1 lb Chicken livers;
1/4 c Butter
1/2 ts Salt
1/4 ts Pepper
1/2 ts Sage
2 Slices prosciutto, diced
8 Bread triangles, sauteed
1/4 c Marsala
1 tb Butter.
Cut livers in half, simmer in melted butter together with seasonings and prosciutto for 5 mins. Remove livers, place them on sauteed bread triangles Add wine to pan gravy, cook 3 mins. Add remaining butter, mix well, pour over the livers. 4 servings. (Keith Floyd's "Floyd on France") (NY Times Cook Book)

It’s really a very simple recipe, good for beginners to boost their confidence in their cooking skills a bit. ???? More info below ????
Homemade chicken liver pate is one of my all-time favourites spreads on toast. I like to serve it with a pickle on the side :) It’s one of my comfort foods that I crave for from time to time.
Initially, I was doing the liver pate with white wine, which works as well. But when I discovered what the sweet red wine adds to the recipe I was super impressed.
What the sweet red wine does is that it balances the bitterness of the liver. It’s fantastic! By the way, foie gras is made out of fattened goose or duck liver. And it tastes so good because of the fat in the liver. The fat is sweet. So it’s the same the sweet from the liver fat balances the bitterness of the liver.
I just tried to find a way for the chicken liver. Actually, a friend recommended :) Thank you, friend!
Here’s what you need for this recipe
???? INGREDIENTS for HOMEMADE Chicken Liver Pate Recipe
Adjust the quantities if you want more. This quantity is enough to last you a few days. Because you don’t need to put a lot on a slice of bread. It has a strong taste, that’s why.
☑ chicken liver (300 g / 10 oz)
☑ 1 medium onion
☑ 2-3 garlic cloves
☑ olive oil – 5 Tbsp
☑ sweet red wine – 1 cup (Porto wine is wonderful for this recipe)
☑ 1 Tbsp butter
☑ 2-3 dry or fresh sage leaves
☑ 1 dry of fresh bay leaf
☑ salt & pepper to taste
???? STEP BY STEP Chicken Liver Pate RECIPE ????
* Step 1: Preheat the olive oil in a pan on medium heat and saute the onions till golden and translucid.
* Step 2. Add the garlic and after 30 seconds, add the liver. Leave on medium heat for 10 minutes without a lid.
* Step 3. Add the sweet red wine, together with the sage and bay leaves. Leave on medium heat for 30 minutes with a lid ON. Stir from time to time. Try it with a knife. If it’s brown inside, it’s done.
* Step 5. Put everything into a bowl and add the butter. Mix it with a hand mixer and make it into a paste.
