PASTA WITH ANCHOVY
RECIPE, Yield: 2-4 servings
8 oz (226 g) pasta spaghettini
(your may use your favorite pasta)
1/4 cup extra virgin olive oil
4 fillets anchovy, best quality oil packed
3-4 cloves garlic, thinly sliced
1 tsp dried chili flakes
1 each tomato, large, diced medium
1 bunch parsley, roughly chopped
as needed pasta water
(this makes your pasta creamy)
to taste grana padano or parmesan cheese
to taste fresh lemon juice
adjust seasoning with salt and pepper if necessary
optional garnish:
more cheese
more extra virgin olive oil
more parsley
and black pepper

PnP Cooking- Making Anchovy toasts on eXpresso
Anchovy Toasts Serves 4
4 slices of country style bread, like a large baguette, ciabatta or sourdough
2 fat cloves of garlic, peeled and cut in half
4 Tbs extra virgin olive oil
300g soft goats cheese, beaten and softened with some cream if necessary
12 anchovy fillets, soaked in milk for 30 minutes and drained
12 black olives, stoned and finely chopped
4 spring onions, finely chopped
2 ripe Roma tomatoes, skinned, seeded and chopped
2 Tbs chopped parsley
Red wine vinegar
Freshly milled black pepper
8 marinated white anchovy fillets
Method
STEP 1: Toast or bake the bread in the oven, rub with the garlic, keeping the cloves for inclusion in
the anchovy olive paste - Or cut a baguette in half lengthwise and each half into two.
STEP 2: Beat the goat's cheese and set aside.
STEP 3: In a food processor, place the anchovy fillets, olives, onions, tomato and parsley and blend,
but not too finely. Add a touch of red wine vinegar if necessary.
STEP 4: Season with the finely ground black pepper.
STEP 5: Spread the goat's cheese onto the toasts. Top with the anchovy olive paste.
STEP 6: Lay two white anchovy fillets like cross on top.
STEP 7: Serve with a small salad.

Recipe: Swordfish with Anchovy Caper Sauce
Ingredients:
4 – 8 ounce swordfish steaks, 1 inch thick
3 tablespoons fresh lemon juice
Zest of 1 lemon
4 cloves garlic, crushed
4 anchovy fillets, packed in oil
½ teaspoon salt
½ teaspoon freshly ground black pepper
¾ cup flat leaf parsley, finely chopped
2 teaspoons fresh oregano leaves or ½ teaspoon dried oregano
1/3 cup Bellucci EVOO
1 tablespoon capers
Directions:
1. In a small saucepan over medium-low heat add the anchovies, Bellucci EVOO, garlic and salt.
2. With a fork, gently press and mash the anchovy fillets and the garlic until they melt together to form a paste. Set aside and keep warm.
3. Heat a cast-iron skillet or grill.
4. Brush each swordfish steak lightly with Bellucci EVOO and place in skillet or on grill. Cook until a golden crust forms on the bottom, about 5 minutes. Turn the fish over and cook on the other side for about 3-4 minutes or until just cooked through.
5. While the fish is cooking on the second side, finish the sauce; to the anchovy garlic mixture add the lemon juice, lemon zest, capers and fresh parsley. Warm together for 2 minutes.
6. Transfer cooked swordfish steaks to a platter and top with anchovy caper sauce. Garnish platter with lemon wedges.
Cook’s Note: Crushing a clove of garlic not only releases its flavorful oils but it makes it easier to peel. Simply place the clove of garlic on a cutting board. With the heel of your hand on the flat side of a chef’s knife press down firmly on the clove of garlic. You will hear and feel the clove break open slightly. Peel away the skin and then firmly press again to further break open the clove.

Anchovy Steak Sauce Recipe / Cambodian Anchovy Sauce ទឹកប្រហុក
Cambodian anchovy sauce is a perfect pairing for steak any day! The spicy and complex flavor combination of anchovies with fresh herbs, spices, crunchy eggplant and a touch of natural acidity from lime juice, really makes this the most memorable steak sauce side by side to the original tuk prahok!
I love roasted garlic and peppers, but you can just use them fresh. For the anchovies, I have no preference in the brand, and would just grab what is ever available at the time of shopping. You can pour the whole anchovies in a sauce pan and slowly boil them into a creamy sauce or minced and paste them with a mortar and pestle. These anchovies can be eaten straight from the can. They are incredibly nutritious.
I'm using two cans of anchovies here, but I will be giving you measurements for each can of anchovies.
For one can of anchovies:
Half to 1 tablespoon sugar ( to your taste)
2 tablespoons water
¼ teaspoon salt
½ teaspoon chicken bouillon
1-2 whole lemon or lime juice (adjust the other ingredients accordingly to the sweetness or sourness of the lemon or lime juice)
2 tablespoons fish sauce
¼ teaspoon msg (optional)
Round khmer eggplants
Olives
Fresh herbs and mints( here I used culantro, coriander, Asian peppermint, cilantro)
Other delicious optionals include lemongrass, kaffir lime leaves, radish, pickled pepper, lemon-lime peels.
