How To make Chicken In a Pot
3 lb whole chicken
2 carrots, sliced
2 onions, sliced
2 celery stalks with leaves,
-cut in 1 1 ts basil
2 ts salt
1/2 ts black pepper
1/2 c chlcken broth or wine
Put carrots, onions, and celery in bottom of CROCK-POT. Add whole chicken. Top with salt, pepper, liquid. Sprinkle basil over top. Cover and cook until done-low 8 to 10 hours. (High 3 to 4 hours, using 1 cup water). Remove chicken and vegetables with spatula. From Rival Crock-Pot cookbook, date unknown -----

You can use this Fragrant Spicy Chicken Pot recipe as a standalone dish served with steamed rice or as a base for your hot pot or steamboat party. If you're using this as a hotpot base, simply prepare another pot of chicken stock as a soup refill. Our friends kept requesting this every time they come over to our place for a gathering. We actually had this dish almost every week in May this year. That's how popular this dish is among our friends. You can moderate the spiciness level by reducing the amount of dried chilli used. Do remember to remove the seeds from the dried chilli otherwise, it will be too spicy.

350g [12.35oz] thinly sliced potatoes
1 red bell peppers

A handful of Chinese parsley (coriander leaves)
180g [6.35oz] Chinese cabbage
100g [3.53oz] enoki mushrooms
40g [1.41oz] glass noodles (rehydrated)

1/2 tsp Salt

2 cups water
Pressure cook on High for 4 Minutes
Do a quick release and turn off Instant Pot
Remove chicken and cut into bite sized pieces
