2 lb Boneless chicken breasts
1 Green pepper cut into 1/4
-inch strips Marinade 2 Or 3 cloves garlic, minced
1/3 c Worcestershire sauce
1 ts Liquid smoke
1/4 ts Black pepper.
1/4 ts Thyme
3 tb Lime juice
Chopped fresh cilantro Sour cream Guacamole
1 Yellow onion separated into
-rings 1 ts Cumin
1/4 c Soy sauce
2 ts Vegetable oil
1/4 ts Oregano
1/4 ts Cayenne
1 Shot Tequila
Shredded cheddar & jack -cheese Salsa Place chicken breasts in a non-metallic container. Top with onion rings and green pepper strips. Combine marinade ingredients in a small bowl; mix well and pour over meat and onions. Refrigerate 8 hours or overnight. Remove the meat & onions from marinade, reserving the onions, peppers and marinade. Place meat on grill, basting often with the marinade and turning often. 2 lbs chicken, steak or shrimp
1/2 bunch cilantro
3 bell peppers
1 small white onion
1 lime
1 tbsp minced garlic
1 tbsp chili powder
1 tsp paprika
1 tsp oregano

3 tbsp oil

1 tbsp Oregano
1 tbsp Garlic Powder
2 tsp Cumin
1 tbsp Smoked Paprika or Regular Paprika
1 tsp Salt & Pepper
1/2 Lemon Juice
2 tsp Olive Oil
For the Rice
200g Uncooked Basmati Rice (Approx. 520g Cooked Rice - 130g per serving)
400-420ml Water
1 tsp Salt, Paprika, Cumin, Garlic Powder, Turmeric
1/2 Medium Red & White Onion Sliced
1/2 Red Bell Pepper Sliced
1/2 Green Bell Pepper Sliced
For the Green Sauce (You will use a smaller amount per serving)
150g Fat Free Greek Yogurt (Brand: Milbona)
50g Light Mayo (Brand: Hellmans)
4 Garlic Cloves
Big Handful of Coriander/Cilantro
1/2 tsp Salt & Pepper
1/4 Lemon Juice
Important Cooking Notes
Make sure you season the chicken on both sides. Cook on medium low heat for 3-4 mins each side till you get a good crust
When cooking the rice, toast with the veggies and spices before adding water
Bring the rice to a light bubble then cover and simmer till fully cooked, about 8-10 mins

8 small flour tortillas/flatbreads (use gluten free tortillas or GF pittas if necessary)
3 chicken breasts sliced into strips
3 tbsp vegetable oil
2 tbsp fajita seasoning
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 onion
1 avocado
Large bunch fresh coriander/cilantro
120 ml (1/2 cup) sour cream
240 ml (1 cup) salsa
50 g grated (1/2 cup) cheddar cheese

Skillet Chicken Fajitas are a great colorful dish perfect for lunch or dinner. Thin slices of marinated chicken with colorful peppers and thin onion strips, cooked quickly in a hot skillet and served immediately with warm tortillas and various toppings are simply a crowd pleasure and a perfect dish whenever your friends come round.

Ingredients
Makes about 4-5 servings
1 red bell pepper, cut into strips
1 yellow pepper, cut into strips
1 onion, cut into thin slices
1/2 tsp (1g) chilli powder
Salt
1 tbsp (14g) oil
15 mini flour tortillas (6 inch - 15 cm)
Chicken Marinade
1 1/4 pounds (550g) skinless, boneless chicken breast, cut into thin slices
2 tbsp fresh cilantro/parsley, chopped
2 tbsp (28g) olive oil
1 tbsp (15ml) soy sauce
1/2 tsp (1g) chili powder
1/2 tsp (1g) smoked paprika
1/2 tsp (2g) salt
1/2 tsp (1g) garlic powder
1/2 tsp (1g) ground cumin
1 tbsp (15ml) lime juice
Topping ideas
grated cheese
guacamole or avocado slices
sour cream
salsa
1. In a large bowl add all the chicken marinade ingredients and mix to combine. Add chicken slices and toss to coat. Cover and refrigerate to marinate for 30 minutes up to 1 hr.
2. Heat a large 12 inch (30cm) iron cast skillet over medium high heat and add 1 tbsp oil.
3. Add onion and peppers, chilli powder and salt and saute for 6-7 minutes until softened , stirring occasionally. Remove from pan and set aside.
4. Add marinated chicken into the hot skillet and cook until no longer pink and cooked through, for about 4 minutes.
5. Add sauteed onions and peppers into the skillet and cook 1 minute more to heat through.
6. Serve immediately with warm tortillas (I’ve used homemade 6 inch (15 cm) flour tortillas), your favorite toppings and enjoy.
