How To make Chicken Curry1
1 lb Chicken breast, boneless
- and skinless 2 tb Oil
1/2 ts Cumin
4 Cardamom seeds
1 Thai chile
2 Cloves
2 md Onion, finely chopped
3 Tomato, whole peeled
1 t Ginger paste
1 t Garlic paste
2 ts Soy sauce
1 1/2 ts Garam masala
1 t Chilli powder
1/4 ts Pepper
3/4 c Water
Clean the chicken, making sure to cut off all fat. Heat the oil, then brown the cumin seeds and cardamom. Add the Thai chile (be careful of the fumes) and cloves. Add the chopped onion, then cook until brown. Then add the tomatoes, ginger paste, garlic paste, and soy sauce. Cook together until all has a pasty texture. Add remaining spices and mix well. Put in the chicken, and stir until coated well with the paste. Cook for five to seven minutes, then add the water. Cover and cook until tender, about 20 minutes. Remove the chile before serving. Garlish with fresh cilantro and serve with cooked rice.

Ingredients:
900g (2 pounds) chicken breast, cut into cubes
2 onions
3 garlic cloves
1 tablespoon grated ginger
3 tablespoons vegetable oil
2 tablespoon curry powder
1.5 teaspoons salt
1/2 teaspoon black pepper
4 large tomatoes, chopped
1 can (400g/14oz) coconut cream/milk
½ teaspoon garam masala (optional)
Coriander, chopped – for garnish
Directions:
1. In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally.
2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes.
3. Add coconut milk/cream, season with garam masala and salt, stir, and cook until lightly thickens.

Sunday walli chicken curry????
No idea why but Sundays without chicken curry feel so incomplete. There has to be one or the other preparation of chicken on Sunday!
Ingredients I used:
- 1 kg chicken
- 3 tbsp oil
- 2 bayleaves/tejpatta
- 2 cardamoms/elaichi
- 1 black cardamom/badi elaichi
- small piece of cinnamon
- 1/2 star anise
- 3 onions, roughly chopped
- 2 tsp ginger garlic paste
- 2 to 3 green chillies, slit
- 2 to 3 tomatoes, finely chopped
- salt
- 2 tsp red chilli powder (customize as preferred, I prefer the curry spicy so added more)
- 1 tsp coriander powder
- 3/4 tsp cumin powder
- 2 tsp chicken masala
- coriander leaves, finely chopped
- 1 cup water
Procedure:
- Heat oil in a pan, add whole spices and stir till fragrant.
- Add onions and fry till they turn dark brown (like shown in the video). Darker the onions, tastier the gravy.
- Add ginger garlic paste and green chillies. Stir well till the paste doesn’t smell raw anymore.
- Add tomatoes and all above mentioned masalas. Mix well and cook till tomatoes are mushy.
- Add chicken and fry for 5-7 mins at least.
- Keep it covered without adding water and let chicken cook for few mins in its own water.
- Add 1 cup water and let it cook again, covered for 7-10 mins.
- Garnish it with coriander leaves.
