How To make Chicken Burritos
3 c Shredded cooked chicken
1 1/4 c Water
1 1/4 oz Pkg Taco seasoning mix
8 ea Flour tortillas (7" to 8")
1 1/2 c Lettuce; shredded
1 c Tomatoes; diced
1 c Cheese; shredded (4 oz)
1/2 c Taco sauce
Plus extra for garnish In a medium skillet, combine chicken, water and taco seasoning mix. Bring to a boil; reduce heat. Simmer, uncovered, 15 minutes, stirring occaisionally. To assemble burritos, heat tortillas according to package directions. Spoon about 1/4 cup chicken mixture just below center of each tortilla. Add some lettuce, tomato, cheese and taco sauce to each tortilla. Fold bottom edge of each tortilla up and over just until filling is covered. Fold opposite sides of tortilla in, just until they meet. Roll up from the bottom. Serve with additional taco sauce if desired. Ingredients (for 4 servings)
For the Chicken:
• 600g Raw Cubed Chicken Breast (140g cooked chicken per serve)
• 1 tsp Oregano
• 1 tsp Cumin
• 1 tsp Paprika
• 1 tsp Garlic Powder
• 1 tsp Chilli Flakes
• 1 tsp Salt & Pepper
• 1 Whole Lime Juice
- Cook on medium heat 3 mins each side, use cooking spray
For the Creamy Green Sauce:
• 80g Avocado (1/2 medium size)
• 120g Fat Free Greek Yogurt (Brand: Milbona)
• A good handful Coriander/Cilantro
• 1/2 tsp Garlic Powder, Salt & Pepper
• 1/2 Lime Juice
Note: You will only use a small amount (20g) per serving
For the Mexican Rice:
• 208g Uncooked Basmati Rice (Approx. 560g cooked weight - 140g per serving)
• 1 tsp Salt, Garlic Powder, Cumin, Paprika
• 50g Tomato Paste
• Garnish with Coriander/Cilantro
For the Sides:
• Handful Shredded Lettuce per serve
• 120g Sweetcorn (40g per serve)
• 120g Black beans (40g per serve)
• Red Onion, Green & Red Bell Pepper
• Lime Wedge
• 20g (or more) Green Sauce Per serve

My favorite fast food restaurant back in the day used to be CHIPOTLE but for the past years this restaurant or at least here in Arizona has not been the same, my favorite side is their cilantro lime rice well now it’s always so bland and their meat is always so dry and just so flavorless definitely not my favorite place, but thankfully we can do it all at home and so much better ???? ☺️???? 2 minced chipotle peppers with 1 tbsp adobo sauce

2 minced garlic cloves
1/4 minced white onion
2 tsp garlic salt
1 tsp ground cumin
1 tsp oregano
1 tsp chipotle powder
1/2 tsp black pepper
1/2 tsp salt
For cilantro lime rice
2 cups white rice I’m using basmati
4 cups water
2 tsp garlic salt
1 tbsp butter
1 tbsp fresh lime juice or juice of 1 lime
Handful of chopped cilantro
Flour tortillas
