MEDITERRANEAN CHICKPEA SALAD RECIPE
2-15 ounce cans of chickpeas, drained and rinsed
1 English cucumber, chopped into bite-sized pieces
1/2 red onion, finely diced
2 cups yellow and orange bell peppers, diced
1/2 cup Kalamata olives, sliced in half
1/2 cup feta cheese, crumbled
1 avocado, chopped
1/4 cup fresh chopped herbs, (I used mint and basil)
salt and pepper to taste
SALAD DRESSING
1/4 cup extra virgin olive oil
1/4 cup lemon juice
1/2 teaspoon Dijon mustard
1 clove of garlic, crushed
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Salad Dressing
In a small spouted cup or mason jar, combine extra virgin olive oil, lemon juice, dijon mustard, garlic, salt, and pepper. Whisk until well combined.
Mediterranean Chickpea Salad
Drain and rinse the chickpeas before placing them into a large bowl. Add on the cucumber, red onion, bell peppers, kalamata olives, feta cheese, avocado, mint, and basil. Set aside.
Drizzle the dressing over the salad and gently toss until all the beans and veggies are coated in the seasoning. Adjust seasonings and enjoy!

⭐️ Ingredients
For the salad
1 can (15 oz) chickpeas or 1½ cups of cooked chickpeas - drained
1½ cups cherry tomatoes
1½ cups cucumber
½ cup olives
⅓ cup red onion
½ cup corn
⅓ cup parsley
1 ripe avocado optional
For the dressing
4 tablespoons extra virgin olive oil
2 tablespoons lemon juice sub apple cider vinegar
1 tablespoon mustard
1 tablespoon maple syrup sub honey
¾ teaspoon salt
¼ teaspoon black pepper
1 teaspoon ground cumin optional

High protein chickpea salad | Protein Salad Recipe | Healthy Salad Recipe
Ingredients:
Chickpea or white chana - 1 cup
Salt - 1tsp
Water - 2.5 cup
Garlic - 1tsp minced
Chilli powder - 1/2 tsp
Cumin powder - 1/2 tsp
Oregano - 1/2 tsp
Olive oil - 1tbsp
Onion - 1/2 cup chopped
Tomato - 1/2 cup chopped
Cucumber - 1/2 cup chopped
Red bell pepper - 1/2 cup chopped
Green bell pepper - 1/2 cup chopped
Carrot - 1/2 cup grated
Coriander leaves - 1/2 cup chopped
Salt as needed
Olive oil - 3tbsp
Lemon juice - 2tbsp
Salt - 1/2 tsp
Pepper powder - 1/2 tsp
Honey/sugar - 2tbsp
Instructions:
1. Soak chickpea for 8 hr or overnight
2. Rinse and pressure cook with enough water and salt for 4-5 whistles
3. Strain it and keep aside
4. Heat pan with olive oil. Saute minced garlic
5. Add cooked and strained chickpea. Then add chilli powder cumin powder oregano and salt
6. Sauté well on medium heat until chickpea coated well with spices
7. Switch off the heat and keep aside to cool down
8. Prepare salad dressings. In a bowl mix olive oil lemon juice honey pepper powder and salt
9. Prepare salad. In a large bowl add chopped vegetables like onion tomato cucumber peppers carrots. Then and cooled chickpea and salad dressing
10. Combine everything and serve
