How To make Cherry Delight Cake
1 Lemon cake mix, super moist
-r pudding cake 1 c Confectioners sugar
8 oz Cream cheese, softened
9 oz Cool whip whipped topping
1 Pkg vanilla pudding mix; sm
-ll Milk 1 c Cherry pie filling
Mix and bake cake according to package directions in 9" cake pans. Cool completely. Mix confectioners sugar, softened cream cheese and 3 tbsp. of Cool Whip whipped topping. Blend well. Spread 1/2 the mixture on bottom layer. Spread 1/2 can cherry pie filling over it. Place on top layer of cake. Secure with toothpicks, if necessary. Spread remaining cherry filling over all. But don't add cherries yet. Blend the pudding mix with the remaining Cool Whip topping. Add a small amount of milk if it seems too stiff. Frost sides of cake and build a rim at the top of the cake to hold the remaining cherry pie filling.

No Bake Cherry Delight
This is an old recipe that mom got from a lady who she's known for years. She recently celebrated her 91st birthday I believe, so this recipe goes way back. It is a very easy dessert to throw together and your family will love it. Best of all, you can change the topping up to whatever kind of fruit you'd like. It is another simple and delicious recipe from mom. Let me know what you think about this version and y'all enjoy.

Ingredients:
Crust:
1 1/2 cup crushed graham cracker crumbs
1 1/4 stick of butter melted
Combine these and push into the bottom of a prepared 9x13 baking dish
Bake for 10 minutes at 350°F
Remove from oven and let cool before placing filling.
Filling:
8 ounces Cream Cheese room temperature
1/2 cup sugar
8 ounces Cool Whip 1 container (mom made whipped cream*)
1 teaspoon vanilla extract
2 cans cherry pie filling
Mix ingredients together (minus pie filling) with a hand mixer till well incorporated.
Spread evenly over the graham cracker crumbs.
Now spread the cherry pie filling over the cream cheese filling.
Refrigerate 2-3 hours (or overnight) before serving.
*Whipped Cream:
16 ounces heavy whipping cream
Blend with hand mixer or stand mixer till heavy peaks appear

Cherry Delight Cake | Easy Cooking | Home Recipes | LoveBites
When berries are in season we really enjoy eating them. But with our season being so short, I also like to turn them into preserves, desserts, cakes and much more. Today, I baked an amazing tea time cake with fresh cherries, almond meal and whole wheat flour. It isn't just delicious but also healthy in every bite. It is velvety soft texture but with juicy berries and just a little crunch and nuttiness from the almonds. Heavenly with my cuppa !
For 6 round cake tin :
Ingredients:
60 grams butter
70 grams sugar
75 grams wholewheat flour
75 grams almond meal
3/4 tsp baking powder
1/4 tsp vanilla extract
30 grams milk
260 grams cherries
1 1/2 eggs
Method: Preheat oven to 180 C. Grease and flour a 6 cake tin. Remove the stem and pit the cherries. Beat butter and sugar until light and fluffy. Mix all the dry ingredients together. Add the eggs one at a time and mix well. Add in the vanilla. Add the baking powder to the almond meal and mix. Add in both flours to the butter mix and mix until combined. Add in the milk little at a time till you get the right consistency. Fold in the cherries and keep some for topping. Pour the batter into the prepared tin. Top it with the cherries and press gently. Bake at 180 C for 30 minutes or until a skewer comes out clean. Keep to cool and unmold. Enjoy!
