Directions:
In a 3 quart saucepan, brown beef; drain and set aside. In the same saucepan, saute onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from the heat; blend in sour cream.

Ingredients

▢½ medium onion finely chopped
▢2 large carrots peeled and chopped
▢1 rib celery chopped
▢1 teaspoon minced garlic
▢1 teaspoon salt
▢1 teaspoon dried parsley
▢½ teaspoon ground mustard
▢¼ teaspoon black pepper
▢3 cups low sodium chicken or beef broth
▢1 lb potatoes cut into ½ cubes (about 3 medium)
▢1 cup half and half cream
▢3 tablespoons corn starch
▢1 cup shredded cheddar cheese
Instructions
In a large pot or dutch oven, cook ground beef and onions until almost browned, about 5 minutes. Drain fat if needed.
Add carrots and celery and cook until slightly softened, about 5 minutes.
Add garlic, salt, parsley, mustard and pepper and cook 1 minute.
Add broth and potatoes.
Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover and simmer for 15-20 minutes until potatoes and carrots are tender.
Whisk together cream and corn starch and add to soup along with cheese, cooking and stirring on low until thickened. Serve.

2 pounds ground beef (80/20)
1 cup beef tallow
4 yellow onions, sliced
1 (14 ounce) can tomato puree
8 cups beef stock
1 bay leaf
¼ cup Worcestershire sauce
½ cup soy sauce
TKTK ketchup
1 teaspoon white vinegar
CROSTINI INGREDIENTS
1 stick room temperature butter
¼ cup yellow mustard
4 brioche hamburger buns
2 garlic cloves
1 tablespoon garlic powder
8 ounces emmentaler cheese, grated
GARNISH
Dill pickle, diced
Yellow onion, diced
COOKING METHOD:
SOUP METHOD:
1. In a large Dutch oven over medium heat, add beef tallow. Once melted, add onions and a pinch of salt. Stir to combine and let the onions gently steam and turn translucent, about 20 minutes.
2. Increase the heat to high and add knobs of ground beef. Using a wooden spoon, break the beef up into small pieces and cook until the beef and onions are deeply golden brown.
3. Once the beef is browned, add beef stock, bay leaf, Worcestershire, soy sauce and ketchup. Stir to combine and bring to a simmer.
4. Simmer for 1 hour, or until reduced and desired consistency is achieved.
CROSTINI METHOD
1. In a small bowl, stir together butter and mustard. Slather 4 hamburger buns with mustard butter and top with cheese.
ASSEMBLY:
1. Preheat oven to 500°F.
2. Set soup tureens on a sheet tray and ladle cheeseburger soup into tureens evenly.
3. Top with hamburger bun crostini and bake until the cheese is brown and bubbly - about 3 minutes.
4. Remove from the oven and top with pickles and onions.

Here is a wintertime soup recipe that our family loves and will warm you up. Leftovers of this are fantastic as well. I used to use yellow potatoes in this recipe then my husband suggested sweet potatoes and we much prefer their flavor in this recipe but feel free to use yellow potatoes if that is all you have. Also ground beef can be subbed in for the ground venison.
Cheeseburger Soup Recipe:
-1lb of ground venison or beef
-1 yellow onion chopped
-2 TBSP olive oil
-2-3 stalks of celery diced
-2 garlic cloves minced
-32 ounces of stock or broth (chicken or veggie)
-1 cup of shredded carrots
-2 sweet potatoes peeled and diced
-3/4 tsp basil
-3/4 tsp oregano
-fresh cracked black pepper
-1/2 tsp salt
-2 TBSP olive oil
-2 TBSP flour
-1 to 1 and 1/2 cups of milk
-1 cup extra sharp cheddar cheese
In a large pot over medium heat put in 2 TBSPs of olive oil along with the meat and onion, brown the meat. Next add in the celery and garlic and cook a couple minutes. Then add in the shredded carrots. Next put in the spices and give it a stir. Add in your stock and sweet potatoes. Bring to a boil and cook for 10-15 minutes until the potatoes are tender. While that is cooking put a small pot on the stove over medium heat. Add in the 2 TBSPs of olive oil and flour to create a roux. Whisk continuously. After a minute slowly add in the milk while continuing to whisk. The sauce should be fairly thick. Then add in cheese and whisk to incorporate. After the potatoes are cooked stir in the cheese sauce slowly. Let it cook on low heat a couple minutes. Taste to see if more salt is needed.(Type of stock and cheese used will change the saltiness of the dish). The soup is done. Get out a bowl and enjoy!
