Here is what you'll need!
BAKED POTATO CASSEROLE
Servings: 12
INGREDIENTS
6 russet potatoes
Olive oil
Salt, to taste
Pepper, to taste
10 slices bacon, cooked and crumbled
3 cups sour cream
4 cups shredded cheddar cheese
Chives, for garnish
PREPARATION
Preheat oven to 425°F/220°C.
Coat potatoes with olive oil, and sprinkle with salt and pepper. Place on a baking sheet and bake for 45 minutes.
Remove potatoes from oven, and let cool. Chop into 1-inch pieces.
Reduce oven temperature to 350°F/180°C.
Lay half of the potatoes on the bottom of a greased 9x13 baking dish. Sprinkle on half of the bacon, spread half of the sour cream, and sprinkle on half of the cheese. Repeat for a second layer.
Bake for 20 minutes, or until cheese is golden brown and the edges are crisping up.
Sprinkle with chives.

Cheesy Potato Casserole
This Cheesy Potato Casserole, also known as Funeral Potatoes, is perfect to feed a crowd at your summer BBQ or a potluck any time of year!
Cheesy Potato Casserole (adapted from the Kellogg’s recipe)
2-10 oz. cans cream of chicken soup
1 c. sour cream
1 small onion, finely diced
1-32 oz. bag shredded potatoes or hash brown potato cubes
16 oz. shredded sharp cheddar cheese
2 cups cornflake cereal
½ stick unsalted butter, melted
Preheat oven to 350 degrees. In a very large mixing bowl, stir together the cream of chicken soup and the sour cream. Add the onions, potatoes, and cheddar cheese. Stir to combine thoroughly. Spread the potato mixture into a greased 9x13 in. glass baking dish. Sprinkle the cornflake cereal all over the surface of the casserole. Drizzle the melted butter over the cornflakes. Bake at 350 degrees for 1 hour. Tent with foil during baking process if cereal starts to brown too much. ENJOY!

Loaded Scalloped Potato Casserole Recipe
Loaded Scalloped Potato Casserole Recipe. Layers of potatoes with a rich creamy decadent sauce. Loads of cheese, crispy bacon, and caramelized onions.
2 tbsp oil
6 shallots or 2 med. onions
1 pk bacon crumbled
3 cups whole milk
4 tbsp all-purpose flour
3 lbs potatoes yukon gold
cheese cheddar, Italian 6 cheeses, mozzarella
4tbsp butter
salt to taste
black pepper to taste
Preheat oven to 350F.
Add oil to a medium skillet and heat over medium heat. Add thinly sliced shallots/onions and salt and pepper, to taste.
Cook over medium heat, stirring occasionally until shallots / onions become caramelized. Remove from skillet and set aside.
Prepare the bacon.
Melt butter over medium heat. Sprinkle flour on top of butter and whisk to form a roux. Cook for 2 minutes.
Slowly add the milk, whisking constantly. Bring roux to a simmer and let thicken just slightly, about 2 to 3 minutes after coming to a simmer.
Remove from heat and set aside.
Assembly
Layer half of the potatoes, half of the caramelized onions, half the bacon, half the cheese, and half the sauce, in that order in the prepared baking dish. Repeat.
Cover baking dish with foil and bake for 1 hour. Remove foil and bake for an additional 30 minutes or until potatoes are easily pierced with a fork.
Remove from oven and let cool 20 minutes before serving.
