How To make Cheese Fondue
1 Clove garlic, peeled and
-cut in half 1 lb Swiss cheese, shredded
1/4 c Flour
1/4 t Salt
Few grains pepper 1/4 t Ground nutmeg (optional)
1 1/2 c Dry white wine
2 T Kirsch (optional)
French bread,cut in 1" cubes 1. Rub the insides and bottom of a deep, 1 1/2-quart heat- resistant,
non-metallic casserole or heat-resistant, non-metallic fondue pot with garlic. Discard garlic. 2. Combine cheese, flour, salt, pepper and nutmeg in the prepared dish. Add
wine and mix well. 3. Heat, covered, in Microwave Oven 6 minutes stirring during last half of
cooking time. 4. If cheese is not completely melted, heat an additional 30 to 60 seconds.
If desired, stir in kirsch. 5. Spear squares of French bread with fondue forks or regular forks and dip
in fondue. 6. If necessary, fondue pot may be placed on a warmer stand over low heat
or returned to Microwave Oven to reheat fondue.

Quick Cheese Fondue
Fondue is fun whenever you serve it. Dipping, dunking and then losing morsels of food creates a friendly and informal atmosphere among friends and family. Cheese spread and milk combine to give a thick, creamy and flavourful fondue almost instantly.
Preparation Time: 5 minutes. Cooking Time: 3 minutes. Serves 4.
1 cup milk
1 cup cheese spread
1 tbsp butter
2 tbsp finely chopped onions
1½ tsp cornflour dissolved in 1 tbsp water
Salt to taste
½ tsp dry red chilli flakes (optional)
For the garnish
¼ tsp dry red chilli flakes
For serving
Toasted bread pieces
1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for a few seconds.
2. Add the milk, cheese spread and cornflour-water mixture, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
3. Add the salt and chilli flakes, mix well and cook on a medium flame for 1 minute.
Serve immediately with toasted bread pieces.

800 gr Alpine cheese of which 400 gr Vacherin saveur, 100 gr Appenzeller gold, 200 gr Gruyère AOC medium, 100 gr Heutaler Morteratsch
4 level teaspoons of maizena (corn starch)
350 ml white wine
½ lemon juice
2 cl kirsch (cherry brandy)
1 clove of garlic
