How To make Cheddar Pasta & Vegetables
1 lb Rotini pasta
2 md Carrot
1 c Broccoli floweretts
2 ea Green peppers, medium
10 3/4 oz Can cream celery soup
1/2 c Cheddar cheese, shredded
1/2 c Milk 2%
1 T Brown spicy mustard
Put on the pasta water to boil. When it is boiling add the sliced carrots. Cook for five minutes. Then add the rotini and bring back to the boil. Once it is boiling again slowly add the broccoli flowerettes. Stir and cook for about 10 minutes until rotini is done. Drain into a colander. Return pan to stove and turn down the heat to low. Add the remaining ingredients. Over low heat, heat until cheese melts, stirring often. Add rotini and vegetables back into the pot. Heat through, stirring occasionally.

INGREDIENTS & PROCESS:
BOIL 2 CUP WATER
½ TSPN SALT
1 TSPN OIL
1 CUP PENNE PASTA
BOIL FOR 10 MIN.
STRAIN THE WATER
WASH WITH WATER
MAKING WHITE SAUCE:
2 TBSP BUTTER
2 TBSP FLOUR
ROAST FOR 1 MIN.
1 CUP MILK
COOK UNTIL THICKEN
1 CHEESE SLICE
1 TBSP OIL
1 TBSP GARLIC
FRY IT FOR 1 MIN. IN LOW HEAT
¼ CUP RED BELL PEPPER
¼ CUP YELLOW BELL PEPPER
¼ CUP GREEN CAPSICUM
FRY FOR 1 MIN.
½ TSPN MIX HERBS
½ TSPN CHILLI FLAKES
½ TSPN OREGANO
BOILED PASTA
½ TSPN BLACK PEPPER POWDER
½ TSPN SALT
ADD THE WHITE SAUCE
MIX IT WELL
POUR IN A HEAT PROOF MOULD
SOME MOZZARELLA CHEESE
BLACK OLIVE
CHILLI FLAKES
COOK FOR 10 MIN.

Mafaldine Pasta
1 cup fresh spinach
1 cup freshly shredded Parmesan cheese
1/4 cup fresh chopped parsley
2 cups heavy cream
2 Tbsp unsalted butter
4 Tbsp avocado oil, divided
Lemon pepper seasoning
Old bay
Smoked paprika
Salt Free Cajun seasoning
2 tsp Garlic paste
1 tsp tomato paste
1 tsp Italian herb paste

Ingredients
2 Tbsp butter
3 cloves garlic
1/2 onion
3 Tbsp tomato paste
1 cup heavy cream
1/2 cup Parmesan cheese
Salt & pepper
12 oz pasta (I used rigatoni)
1/3 cup pasta water
Basil & parm for garnish
Cook your pasta in salt in water to package directions (save some pasta water). In a pan over medium heat, add butter, onion and garlic. Cook until softened around 2 minutes. Add tomato paste and cook until lightly caramelized. Add your cream, then season with salt and pepper. Add Parmesan cheese, pasta water and your cooked pasta. Mix well. Serve with basil or fresh Parm.

Ingredients
2-3 Tbsp Butter
1 small shallot finely diced
8 to 10 ounces of Fettuccine or your Favorite Pasta
4 to 6 ounces of mixed Mushrooms sliced
1 tablespoon Thyme or Rosemary
1 tablespoon Garlic chopped
1 tablespoon Parsley chop
2 to 3 ounces of Chicken Stock
8 ounces Heavy Whipping Cream (no light cream)
1 cup Parmesan and Pecorino Romano (if you have it) grated
INSTRUCTIONS
In a sauté pan, heat the butter, and when melted, add the onion and cook for about 5 minutes at medium heat. Add the mushrooms, salt, and pepper and sauté until they have released ALL their water.
Add the garlic and the fresh herbs.
Add the chicken stock and let it reduce for a minute. Add the cream and let it reduce to the right thickness. Make sure to cook until you have the perfect texture, which is to coat the pasta.
Add the cheese and adjust the seasoning with freshly ground black pepper.
