Parmesan Cheese Wheel Pasta
Cheese wheel pasta has constantly been featured across the internet, so I finally had to give it a try. So, we shipped an 80 pound parmesan cheese wheel straight from Italy. The first trip, it was damaged in transit. I don't know exactly what that means...did it roll off the truck? Did somebody accidentally damage it so they could eat it? I mean, who doesn't want some fresh Parmigiano Reggiano. But it really does make me think. Hmm...
But the second trip, it made it all the way to my kitchen in Boston. After learning the delicate yet demanding process of opening the cheese wheel, we dug out a bowl within the cheese, lit it on fire to get a cheesy sauce, then added our fresh, homemade egg pasta to with some garlic cream sauce and blended it together. The result? Indescribable.
Homemade Pasta
2 cups all-purpose flour
2 eggs + 4 yolks
Cream Sauce
1/2 cup butter
4-6 cloves garlic
2 tbsp all-purpose flour
2 cups heavy cream
grated parmesan until thickened sauce

How to: Pasta Caviar Recipe * | Cooking | Vlog |
Cold Pasta is one of those menu I've never thought of making at home. I've recently learned how to make this from a Chef friend, and who knew it would be this easy and simple yet so deliciously amazing! Anyone can make it and it will only take 15-30 mins max. Try this out and you'll see for yourself :)

** Recipe **
Ingredients:
- Spaghettini or pasta of your choice 50 g.
For citronette dressing
- Extra virgin olive oil 50 ml.
- Lemon juice 10 g.
To top the pasta
- Red onion or shallots 8 g.
- Spring onion or chives 2 g.
- Caviar 1 tin (50 g.)
Ground black pepper & Salt to taste
Preparation:
Cook the pasta
1. In a large size pot, fill up water to boil the pasta. Add table salt to season the pasta water.
2. Once water has reached boiling point, put in the pasta. Set time for 8 minutes for Al Dente (this depends on the pasta that you're using so check instructions for the cooking time on the packet first!)
3. While waiting for pasta to cook, prepare ice water on the side.
4. Once the timer goes off, turn off heat, let the pasta sit in the water for another 30 seconds.
5. Take out the pasta and dunk it right into ice water you've prepared on the side. Let pasta sit in there for a minute or two to cool down.
6. Strain pasta. Remove as much water as possible and let the pasta dry.
7. Put the strained pasta in a bowl, and keep it cool by resting it on top of the previous ice water bowl. Set aside.
Prepare toppings
1. Gently chop spring onion, set aside.
2. Dice red onion finely, set aside.
Make citronette dressing
1. Cut lemon and squeeze lemon juice through a strainer.
2. Add some salt and ground black pepper to lemon juice.
3. Slowly add extra virgin olive oil to the juice while whisking. Keep adding little by little and whisking at the same time until mixture is emulsified. Set aside.
Final assembling & Plating
1. Dress the pasta with citronette dressing, mix well.
2. Twirl pasta into caterpillar shape, then plate.
3. Garnish pasta with spring onions, then top with red onions and caviar. And we're done!
