CAULIFLOWER FRIED RICE RECIPE (
1 cup egg whites
2 teaspoon sesame oil
1/2 onion, chopped
2 garlic cloves , chopped
1 teaspoon grated ginger
1.5 cups frozen mixed vegetables (i like peas, green beans, corn + carrot combo)
16 ounces (2 big cups) cauliflower rice
3-4 tablespoons soy sauce
*Optional toppings: gomasio/scallions/peanuts
In a small nonstick pan, cook your egg whites and set them aside.
Heat sesame oil on a large non stick skillet and add in the onions, garlic and ginger. Cook for a couple of minutes or until the onions are beginning to look translucent.
Add in frozen veggies, cauliflower rice, and soy sauce. Pop in a lid and cook for about 5 minutes or until the veggies are warm and tender.
Adjust seasonings. Serve and enjoy with optional toppings.

This recipe came about from me trying to make a cauliflower crust pizza but instead made this vegan cauliflower scramble. That is very healthy and yummy. All you need is a few ingredients and less than an hour to make this. It's very easily customizable and you can make it your own. This recipe can also be a vegan lunch recipe or a vegan dinner recipe. It's also light enough to be a snack. Ingredients/ Method
4-5 cauliflower florets
Salt per taste
Oil for cooking
1/2 tsp cumin seeds
1/2 tsp paprika or chilli powder
1/2 tsp turmeric
1 tsp curry powder or spice blend of choice
green onions for garnish
1 tbsp garlic cloves minced
1 small onion chopped
Method:
Blend cauliflower or grate it. Heat oil in a pan. Fry cumin, onions, salt, chilli powder, turmeric and garlic cloves together until onions no longer raw. Add cauliflower. Mix well. Cover and let cook for 5-10 mins. Once done, season with spice blend of choice and add green onions as a garnish. Enjoy.

Cauliflower Rice Breakfast Scramble
Ingredients
12 oz. Cauliflower Rice
1 lb. Hamburger Meat
3 eggs
2 tbs Heavy Whipping Cream
2 cup Spinach
¼ cup Mozzarella Cheese
1 ½ tsp Salt
1 ½ tsp Pepper
1 tsp Onion Powder
1 tsp Garlic Powder
Optional Jalapenos
Heat up the skillet over Medium High heat and add olive oil. To one pan add cauliflower rice and to the other pan add the hamburger meat. Sauté the cauliflower rice for 5 minutes until soft and browned in some spots. Break up the hamburger meat into crumbles and season with 1 tsp of the salt, and pepper, also add in the onion powder and garlic powder. Once the cauliflower rice is cooked add it in with the hamburger meat. To the pan that had the cauliflower rice add in some additional olive oil or butter and pour in the heavy whipping cream and eggs. scramble the eggs to your liking 1-2 minutes. Once cooked add to the hamburger and cauliflower rice. Top the breakfast scramble with spinach and mozzarella cheese. Cook for an additional 1-2 minutes to allow the spinach to wilt and cheese to melt. Serve and enjoy.

While chopped cauliflower is microwaving for 5 minutes, sautee all the spices in the low salt soy sauce and olive oil. Mix in cooked cauliflower when done, add egg whites from carton, then cook 2 more minutes till done! Lets talk health. The cauliflower has lots of anti-oxidants and fiber. Both the ginger and garlic *may* have medicinal benefits, who knows, they sure make it taste good though so who cares.
