How To make Cauliflower Scramble
20 oz Cauliflower in cheese sauce,
-frozen 1 md Zucchini, sliced
1/4 c Finely chopped onion
2 T Butter
1/2 t Salt
1/8 t Thyme leaves crushed
2 Tomatoes, cut into 8 wedges
-each 1 Heat cauliflower in pouches in Microwave Oven for 9 to 10 minutes or
until thawed. (Pierce holes in pouches with the tines of a fork to allow steam to escape.) 2. In a deep, 2-quart. heat-resistant. non-metallic casserole place
zucchini, onion and butter and heat, uncovered, in Microwave Oven 3 minutes or until zucchini and onion are tender. 3. Add caul iflower in cheese sauce and tomatoes to onion- zucchini
mixture. Add salt and thyme leaves to mixture. 4. Heat, covered, in Microwave Oven 5 minutes or until tomatoes are tender.

CAULIFLOWER FRIED RICE RECIPE (
1 cup egg whites
2 teaspoon sesame oil
1/2 onion, chopped
2 garlic cloves , chopped
1 teaspoon grated ginger
1.5 cups frozen mixed vegetables (i like peas, green beans, corn + carrot combo)
16 ounces (2 big cups) cauliflower rice
3-4 tablespoons soy sauce
*Optional toppings: gomasio/scallions/peanuts
In a small nonstick pan, cook your egg whites and set them aside.
Heat sesame oil on a large non stick skillet and add in the onions, garlic and ginger. Cook for a couple of minutes or until the onions are beginning to look translucent.
Add in frozen veggies, cauliflower rice, and soy sauce. Pop in a lid and cook for about 5 minutes or until the veggies are warm and tender.
Adjust seasonings. Serve and enjoy with optional toppings.

CAULIFLOWER OATMEAL RECIPE
1/3-1/2 cup (35g) old-fashioned rolled oats
3/4 cup water
1 cup (100g) frozen cauliflower rice
1/2 cup (135g) egg whites
1/2 scoop (14g) vanilla protein powder I use Tera’s Whey
Cinnamon +nut butter + berries!
STOVETOP METHOD
Place oatmeal and water in a small saucepan and cook for two minutes, stirring occasionally.
Stir in cauliflower rice and cook for another 1-2 minutes. You want the oats and cauliflower to be warm but not hot (if the oats are too hot, the egg whites will scramble).
Slowly stir in the egg whites and cook for another 2-3 minutes. Do this slowly over low-medium heat, so the egg whites temper and become nice and creamy. You will know the oats are done because they will nearly double in size and will be super fluffy and creamy.
Transfer to a serving bowl and stir in protein powder and cinnamon. Add your favorite toppings (I love fresh berries + nut butter!) and enjoy!

MICROWAVE METHOD
Place oatmeal and water in a microwave-safe bowl (I like using a spouted glass cup). Microwave for 1-2 minutes.
Stir in cauliflower and microwave for another 1-2 minutes. You want the oats and cauliflower to be warm but not super hot (if the oats are too hot, the egg whites will scramble).
Slowly stir in the egg whites and cook for another 1-2 minutes (checking and stirring after one minute). You will know the oats are done because they will nearly double in size and will be super fluffy and creamy.
Transfer to a serving bowl and stir in protein powder and cinnamon, and add your favorite toppings.
NOTES
Make ahead: For busier mornings you can prep this oatmeal the night before. Cook as directed, then store in a sealed container in the refrigerator. Reheat either on the stovetop or in the microwave with a splash of almond milk or water. It will kept in the refrigerator for up to about 3 days.
