Southern Baked Mac & Cheese | Mustard Fried Catfish | Southern Cabbage in an Instant Pot

Hey guys! Watch me as I make this delicious Soul Food Dinner! On the menu—Southern Baked Mac and Cheese, Southern Cabbage with Smoked Turkey Wing (Instant Pot), and Mustard Fried Fish. You don’t want to miss this delicious meal!

Ingredients:

SOUTHERN BAKED MAC & CHEESE

3/4 of a 16oz box of elbow macaroni
1/2 cup of sharp cheddar cheese
1/2 cup of Parmesan cheese
2 cups of colby jack cheese
2 cups of mild cheddar cheese
1 can of Campbell’s cheddar cheese soup
Approx 2.5 cans of evaporated milk (close to 4 cups)
1 egg
4 tablespoons of butter
Black pepper
Salt
Garlic powder
Onion powder
Smoked paprika (garnish)
Parsley flakes (garnish)

Bake in 350 degree Fahrenheit oven for about 30-35 minutes

MUSTARD FRIED CATFISH

6 Catfish fillets
Andy’s fish breading
Old Bay Seasoning
1/4 cup of yellow mustard
Oil for frying

Heat oil to 350 degrees Fahrenheit. Fry fish approx 3-4 minutes on each side (if pan frying). Fish should be golden brown and crispy. Serve with hot sauce.

SOUTHERN CABBAGE W/ SMOKED TURKEY WING
(Instant Pot Recipe)

1 large head of cabbage
1 packet of Wiley’s Greens Seasonings
1 large yellow onion
2 bell peppers
1 tablespoon of chicken bouillon
4 cups of water
Smoked turkey wing

Add smoked meat, water, and bouillon to the pressure cooker. Put on the lid. Press the button that says “meat” or “chicken”. Make sure you change the setting to cook it well done. Let smoked meat cook for 35 minutes. Release pressure.

Add your cabbage, onions, and bell peppers to the pressure cooker. Put the lid on. Press the “vegetable” button or the “soup/stew” button. I would suggest cooking the cabbage for about 5 minutes to prevent it from getting mushy.

This well-seasoned baked catfish will net compliments from family and friends whenever served. The catfish is moist and flakey, the coating crisp, crunchy and flecked with spices.

Baked Catfish Ingredients:

1 -1 1⁄2 lb  catfish

4  tbs melted butter

1 lemon (optional)

3 minced garlic cloves (or more if you like garlic like I do)

1  tsp sugar

1⁄2 tsp salt and pepper

1⁄2 tsp thyme

1⁄3 cup  breadcrumbs

Baked Catfish Directions:

1 Preheat oven to 425. Lightly grease or spray a baking dish.

2 Rinse fish filets and pat dry. Lay them flat on a foil-lined baking dish.

3 In a small bowl, combine melted butter, garlic, sugar, salt and pepper and thyme. Stir and Pour over fish.

4 Sprinkle breadcrumbs generously over the fish.

5 Bake at 425 for about 20 minutes or until filets are cooked through.

6 Squeeze the lemon over the fish (optional).

½ cup sour cream or thick yogurt
½ cup milk
½ cup cheddar cheese, grated
1 tbsp cayenne powder
Salt and ground black pepper to taste

0:10 Preheat oven to 400 degrees F and grease a baking dish with cooking spray.
0:17 Combine the catfish and potatoes in a large mixing bowl.
0:22 Sprinkle cayenne powder then season with salt and pepper. Toss to combine and set aside.
0:32 In a large bowl, combine thick yogurt or sour cream and milk. Stir until evenly incorporated.
0:38 Transfer the seasoned catfish and potatoes into your greased baking casserole then pour your sour cream mixture over the catfish and potatoes.
