Cashew Mushroom Curry Noodles
You got to satisfy your cravings for something spicy and savory with this straight-fire vegan cashew curry mushroom noodles dish. Made with mushrooms and creamy cashews, it's a perfect meal for any day or night.

1 -2 tbsp avocado oil
1 cup of chopped yellow onion
1 Tbsp minced garlic
1 tbsp chopped ginger
1 tbsp 1 tsp curry powder
2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground turmeric
2 cups vegetable broth or water and bouillon cubes
1 can of diced fire-roasted tomatoes
1/2 cup of cashew cream (Blending soaked cashews with little water)
2 cups sliced mushrooms
1 cup finely chopped red bell peppers
1 cup finely chopped yellow bell pepper
8 oz noodles
1 tbsp chili oil
Salt and pepper to taste
Garnish with fresh cilantro
Directions:
Sautee onion the onion for 3-5 until softened in avocado oil.
Next, add garlic, ginger, curry powder, cumin, coriander, turmeric, salt, and pepper, and cook for 2 -3 minutes. Do not overcook.
Mix in vegetable broth, Fire roasted tomatoes, cashew cream, and boil.
Lower heat and simmer for 5-6 minutes
Blend the sauce for a smooth consistency and add it to the pan.
Add the mushrooms, orange bell peppers, red bell peppers, and carrots. Simmer for another 10-15 minutes or until the vegetables are fully cooked.
Add cooked noodles to the plate and drizzle with this fire curry!

How To Make Chicken Cashew Nut Noodles
1 small red capsicum (or 1/2 large) finely sliced
1 chicken breast, thinly sliced
1 red chilli, sliced
1 cup broccoli flowers
1 cup sliced carrot
3 tbsp peanut oil
pinch salt
1/2 tsp black pepper
3 crushed garlic cloves
2 tbsp rice wine vinegar
3-4 tbsp hoisin sauce
1 tbsp soy sauce
1 cup hokkien noodles
3 tbsp crushed cashew nuts
Garnish with cashew nuts and spring onions
Healthy Recipe Ideas | Cashew Chicken Stir-Fry & Low Carb Noodles
Our Cashew chicken stir-fry recipe tastes as rich as it would be with a shop bought stir fry sauce - not to mention far less sugar!
A handy tip: Make extra for lunch the next day!

Ingredients
- 100g Raw chicken breast
- 1 Tbs Myprotein Cashew Butter
- 15g Myprotein Cashew Nuts
- 1 pack of Myprotein Zero-Sugar My Noodles
- 150g Mixed Stir-fry vegetables
- Splash of Soy Sauce

Method
1) Poach the chicken breast in boiling water and salt until thoroughly cooked (cut and see if it's no longer pink inside) - then cut into slices.
2) Prepare the noodles following the instructions on the packet.
3) To a dry frying pan, add the stir-fry vegetables, noodles and a splash of soy sauce and place on a lid to allow to fry.
5) Cover the chicken with the cashew butter.
6) Once everything is cooked, place the covered chicken over the stir-fry and top with cashew nuts.
