Classic Cashew Chicken Stir Fry - Thai Style
You can make better than take out Thai style cashew chicken stir fry at home in less than 30mins. This recipe made with Crispy toasted cashew nuts, marinated chicken and vegetable cooked together in homemade sweet and savoury sauce. This dish goes really with your favourte Jasmine rice or noodles.

???? Ingredients
▢400 g Chicken breast About 14oz, Boneless chicken breast/thigh, cut small cubes.
▢80 g Raw cashew nuts About half cup or use roasted cashew nuts
▢3 cloves Garlic Finely chopped
▢½ Onion Cut small dices
▢8-10 Dried Chillies Deseeded and cut small pieces,
▢100 g Mushroom About 3.5 oz, Straw, button, white mushrooms, etc
▢½ Bell Pepper Cut small squares
▢3-4 Spring Onion cut 2'' pieces
▢2-3 tbsp Vegetable oil Peanut, canola, sunflower, or neutral flavour oil
Marinate for Chicken
▢1 tsp Light soy sauce Or regular soy sauce
▢½ tsp Baking Soda
▢1 tsp Corn starch
▢1 tsp Sugar
Stir Fry Sauce
▢1 tbsp Light soy sauce Or regular soy sauce
▢1 tsp Dark sweet soy sauce Or dark soy sauce or Kecap Manis
▢1 tbsp Fish sauce
▢2 tbsp Oyster sauce
▢1 tsp Sesame oil
▢2 tsp Sugar
▢½ tsp Corn starch
First combine all the sauce ingredients to a small bowl and prepare the chicken and vegetables.
Next, marinate the chicken pieces with soy sauce, baking soda, corn starch, and sugar.
Sauté the cashew nuts for 2-3 minutes until crispy golden brown.
Stir fry the marinated chicken for 2-3 minutes until the chicken is cooked through and set it aside.
Add onions and stir fry for few seconds, and follow with the dried chillies.
Next add the garlic, red peppers and mushrooms.
Add the cooked chicken back in the pan and pour the sauce in and combine well.
Once the sauce become thick, add the cashew nuts and spring onions.
Mix well and serve with Jasmine rice or noodles.

2 medium Chicken breast, skins off
5 Medium mushrooms, chopped in to two halves
3-4 garlic cloves, pounded
2 stalk spring onions (scallions or green onions), chopped
5 to 7 Sugar snap peas or Snow peas
1 small Carrot, julienne cut
1 medium Red chili
1 tbsp Freshly pounded Ginger
1 tsp Lime zest (optional)
1/2 of medium Red onion, sliced
½ cup of Roasted Cashews
6 tbsp Oyster sauce (reduce to 5tbsp if required)
2 tbsp Soy sauce (add additional 1 tbsp if required)
4 tbsp Sesame oil
