2 c Pureed cooked carrots 1 1/2 c Evaporated milk 1/2 c Sugar 2 Eggs 1 t Cinnamon 1/4 ts Ginger 1/4 ts Nutmeg 1 Unbaked pie crust - see below
PIE CRUST:
2 c All-purpose flour 1/2 ts Salt 1 c Vegetable shortening Ice water FILLING AND ASSEMBLY: Heat oven to 450 degrees. Mix all ingredients together at medium speed of electric mixer, blending thoroughly. Pour into pie shell and bake at 450 degrees for 5 minutes. Reduce heat to 325 degrees and continue cooking for 45 minutes, or until pie is set. Let cool about 10 minutes before serving. PIECRUST: Mix flour and salt together in a bowl. Cut vegetable shortening into flour until mixture resembles course meal. Sprinkle with ice water, 1 tablespoon at a time, mixing quickly with a fork after each spoonful. Add only enough water so dough holds together and can be formed into a ball. Divide dough into 2 equal portions and form each into a smooth ball, handling as little as possible. Roll one portion out onto lightly floured surface. Place rolled dough in a 9-inch pie plate; trim and flute edges.

Shredded Carrot Pie Recipe
9 inch Pecan Crust 1 1/4 cups of matchstick carrots 1 1/4 cup of sugar 3 eggs 3 tbsp. unsalted butter 12 oz can of evaporated milk 1 tsp. of seven spice 1 tbsp. of vanilla extract zest of half a lemon
Preheat oven to 350
Microwave carrot on high for 5 to 6 minutes and cool. Add carrots, sugar, room temperature eggs, melted butter, evaporated milk, spice, vanilla extract and zest of half a lemon.
Mix well. Pour into pie shell. (Thawed regular pie shell can be used instead of Pecan pie shell)
Put into oven for 45 minutes to 1 hour. Let COOL COMPLETELY.
Cover with aluminum foil while hot for soft crust. For crunchier crust, do not cover with aluminum foil.

In previous month's I posted a lot of videos of what one can do with carrots - Here's another one , this time something sweet and basic
If you are using frozen carrots that are soft, follow this recipe exactly. If you are using fresh raw hard carrots , make sure to boil them before mashing them. Boiling the carrots will help them soften and will be easier to work with.
Ingredients:
For Crust:
2 Cups flour 1 1/2 water
For Filling
¾ cup sugar
2 cups chopped carrots
2 eggs
1 teaspoon ground cinnamon
2 teaspoon vanilla extract
¾ cup milk
Method:
Make a pie shall by mixing flour and water. Roll it out. lay the pie shall in a baking tray.
Mash carrots with a blender. Add eggs, sugar, cinnamon, vanilla and milk to the carrots and mix thoroughly.
Pour the Mixture into the pie shell in the baking tray.
Cook for 45 Minutes on 180 °C
Top it with some whipped cream or whipping cream.

My sister reminded me of the carrot pies my father used to make and then how much my granddaughter loves carrots of course I had to make a carrot pie for her. And she loves it!
