How To make Carrot Pasta
4 cups Eagle Mills Semolina for Pasta or Pasta
Flour 1 Tablespoon Oil
3/4 Carrot Puree*
2 large Eggs
Water to bring liquid to 1 cup
* Prepare carrot puree by cooking 5 medium carrots in water until soft. Drain cooking water and puree carrots in a blender or food processor. Allow puree to cool.
1.) Place dry ingredients into the mixing bowl of your pasta
maker; add oil. 2.) In a bowl, mix carrot puree and eggs until well blended. Add
water, if needed for 1 cup. 3.) Add liquid ingredients through the feed tube in a very slow,
but steady, stream. 4.) At this point, refer to your pasta machine's manual to achieve
optimum dough development and for instructions on how to extrude the dough.
Variations: Add 1/8 tsp. Nutmeg, Ginger, or 1 tsp. dill to dry ingredients

Ingredients (makes one kid’s portion)
* 50-60g uncooked pasta
* 1 medium carrot, finely sliced
* 2 big tablespoons of cream cheese/vegan cream cheese*
* 1/4 onion, diced
* 2 tbsp olive oil
* Salt & pepper to taste
* NOTE: for young babies you can use mascarpone instead as it’s naturally lower in sodium
Method
1. Cook the pasta according to the instructions on the pack. (Remember to keep a little of pasta water for the sauce).
2. Heat the olive oil in a medium pan, add the diced onion and cook until fragrant.
3. Add the sliced carrot and half glass of water and cook until carrot is very tender. Remove from the heat and set apart.
4. Place the cream cheese in a food processor then add the carrot and a couple of spoonfuls of pasta water. Season with salt and pepper if you wish and pulse until smooth and creamy. You may need to add a dash more water until you reach the consistency you like best.
5. Coat your cooked pasta with the carrot sauce.
6. Serve with some grated Parmesan, if desired.

Carrot Pasta Recipe
Serves 8
Ingredients:
1 Dry Measuring Container filled with all-purpose flour, leveled*
1 Dry Measuring Container filled with semolina flour, leveled*
1 tsp. salt
carrot juice
Directions:
1. Add the flour and salt to the Mixing Chamber. Close the lid.
2. Add the carrot juice to the Liquid Measuring Container until you reach the 150-mL line on the container.
3. Press the Power Button and then press the Batch Button twice to select two batches. Then, the Pasta & Beyond will begin mixing.
4. Slowly add the liquid to the Mixing Chamber along the entire length of the slot in the lid while the Pasta & Beyond is mixing.
5. The Pasta & Beyond will pause to let the dough rest and then begin turning in the opposite direction to begin extruding the dough. While the pasta is extruding, cut it to size using the Spatula/Cleaning Tool with a downward motion. Cut to your desired length. For most pasta, cut at about 10 inches for each portion.

2-3 cloves garlic
1 yellow onion
1/2 TBSP Curry powder
7-8 medium carrots
8-10 cups chicken stock
chives to finish
creme fraiche to finish.
In a pot over medium heat, add onions, and cook for 4 minutes, then add your garlic and curry powder cook for 1 minute.
Then add carrots, chicken broth, salt, and pepper. Bring to a boil Drop to a simmer and cook until everything is soft. then blend your soup until smooth. Season to taste with salt and pepper, and serve with chives and sour cream.
