CARROT CAKE CHEESECAKE
INGREDIENTS
Carrot Cake
1 ½ cups carrots, shredded (2-3 carrots)
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
½ cup canola oil
⅔ cup powdered sugar
⅓ cup packed light-brown sugar
2 large eggs
1 teaspoon vanilla extract
Cheesecake
16 ounces cream cheese, softened
⅔ cup powdered sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
PREPARATION
Carrot Cake
Preheat oven to 180°C/350°F.
Grease an 8-inch springform pan, set aside.
Shred carrots by hand or in a food processor then set aside in a small bowl.
In a large bowl combine powdered and brown sugars with eggs, whisk until smooth.
Add oil and vanilla, mix.
Add remaining carrot cake ingredients and stir until blended, set aside.
Cheesecake
In a large bowl, whisk cream cheese and powdered sugar until smooth.
Mix in eggs one at a time.
Mix in remaining ingredients until well blended.
In a prepared 8-inch springform pan, pour ¾ of the carrot cake mixture and smooth it out, followed by ½ of the cheesecake mixture, then repeat with remaining mixtures.
Bake for 45 minute. Remove from oven and let cool to room temperature, about 1 hour.
Refrigerate for 4 hours, or overnight.

▶️THE RECIPE:
INGREDIENTS:
Cake:
One:
1 1/4 cups unsweetened applesauce or oil, this is what my Nana used
2 cups granulated sugar
3 eggs room temperature
Two:
2 cups all-purpose flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Three:
2 cups grated carrots
1 cup shredded sweetened coconut
1 cup chopped nuts optional
1 tsp vanilla
1 cup Dole crushed pineapple not drained! {use the pineapple in JUICE not syrup}
Cream Cheese Frosting:
1/2 cup butter softened
8 oz cream cheese softened
1 tsp vanilla
1 lb powdered sugar
top with toasted pecans or coconut if desired
INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. Combine #1 ingredients. Add #2 ingredients. Stir in #3 ingredients.
3. Pour into a lightly greased 9 x 13 , two 9-inch pans or three 8-inch pans. (The cake is very moist so cutting parchment for the bottom of your pans will ensure they don't stick. I prefer to use the non-stick baking spray that has the flour in it for easy cake removal.)
4. Bake for 35-40 minutes for the 9x13 and 9-inch pans and 25-30 minutes for the 8-inch pans. You're looking for an inserted toothpick to come out clean.
5. Let cakes cool for 10 minutes in the pan and then remove to a cooling rack and let cool completely.
For the frosting:
1. Beat the butter and cream cheese until nice and fluffy. Add in the vanilla and powdered sugar and beat until nice and smooth.
2. Invert the cake onto a cake plate or stand.
3. Apply a generous dollop of frosting and spread...
4. Gently place the second cake on top and continue frosting. Repeat with the third cake if you made three.
5. Refrigerate for an hour before serving for best results.

Amazing Carrot Cake Recipe
My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!

make a tiny carrot cake…that you can eat all by yourself
i did give myself a high five when i came up with this mini carrot cake. the cake itself is so flavourful thanks to the addition of orange, it's vibrant, and it's on the denser side of the cakes i've done so far but still incredibly soft. then the frosting, with the lightness of whipped cream and unique flavours the brown sugar and nutmeg adds to the cream cheese, it pairs SO well with the carrot cake. but the decoration. like come on. there's not too much one can do with fresh carrots in the cake decorating realm so guess what, i candied it. these candied carrots created the most delightful floral design on this single serving carrot cake, perfect as an Easter dessert and Spring baking.

1 tbsp orange zest
2 tbsp (25 g) orange juice
80 g (1 small) shredded carrot

Thinly sliced carrot

This carrot cake is fully loaded with moist and fluffy, tender crumbs and topped with a subtle tang from the creamy cream cheese frosting. You really can’t beat this classic yet easy recipe for the best carrot cake which is enjoyed all year long!
You’ll need:
• 1 ¼ cup all-purpose flour (spooned & leveled)
• 1 tsp all spice (cinnamon, nutmeg, clove)
• ½ tsp salt
• ½ tsp baking soda
• ¾ tsp baking powder
• 2 large eggs (room temperature)
• ½ cup light brown sugar (lightly packed)
• ½ cup white sugar
• ¾ cup vegetable/canola oil
• 1 tsp vanilla extract
• 1 ½ cup finely grated carrots
* Using an 8x8 inch round baking pan in the video
Cream Cheese Frosting Recipe:
• 4oz. cream cheese (softened)
• ¼ cup salted butter (softened)
• ½ tsp vanilla extract
• 1 cup SIFTED powdered sugar (a little more if you like sweeter frosting)
* Mix cream cheese and butter at medium high speed until well creamed and combined (about 30 secs.)
* Add the vanilla extract at once and powdered sugar gradually. Mix until very fluffy/or stiff peaks form (about 1 min.)
:: HELPFUL HINTS ::
* Measure your flour correctly (spoon & level method). Adding too much flour will result to dry and tough cake when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level it off.
* Let the cake rest in the baking pan for 5-10 minutes. Transfer to wire rack to finish cooling completely (about 2 hours).
* Let your cake cool completely before adding the frosting. Warm cake results to soaking your cake with melted frosting.
