How To make Carrot Cake with An Indian Flavor
1 1/2 ts Vegetable oil
1 c Unbleached white flour
plus extra for dusting 1 ts Baking soda
1/4 ts Salt
2 lg Eggs
1/4 ts Ground cardamom seeds
1 c Granulated sugar
1/4 c Softened clarified butter
:
(ghee) 1 1/2 c Grated carrots
firmly packed 2 tb Chopped pistachios
2 tb Chopped blanched almonds
2 tb Raisins
Edible silver foil (opt.) "A characteristic sweet of southern India is carrot halvah, a rich, sweet reduction of carrots and spices that is almost fudgelike in consistency. This cake falls somewhere between this traditional treat and the popular American carrot cake. It has a dense texture and the unexpected flavor of cardamom, yet doesn't require the tedious cooking and stirring of a halvah. "Special Indian dishes are often decorated with silver foil :
a microscopic thin sheet of edible, flavorless real silver, available in Indian groceries. We have cut edible foil into decorative shapes a tedious business that must be done in a completely draftless room :
but more manageable solid toppings are customary. "Serve this nontraditional ending to your Indian meal with coffee that has been brewed with a few cardamom seeds." Rub a round cake pan that is 9 inches in diameter and 1-1/2 inches in height with the vegetable oil and then dust it very lightly with flour. Preheat the oven to 350 F. Sift 1 cup flour with the baking soda and salt. Beat the eggs well in a large bowl. Add the cardamom, sugar, and clarified butter. Keep beating until all the ingredients are thoroughly mixed. Add the sifted flour mixture to the ingredients in the large bowl and fold it in gently with a spatula. Add the carrots, pistachios, almonds, and raisins. Fold them in gently as well. Turn the cake batter into the oiled and floured cake pan and bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean and

Baking paper

Carrots - 3/ Crushed carrots - 1 cup

Salt - 1 pinch
Sugar - 3/4 cup
Vanilla essence
Ornage juice(optional) - 1 tbsp
Sunflower oil - 1/2 cup

Learn how to make Eggless Carrot Cake, a delicious desert cake recipe with Priyanka.
Specially on viewers demand, our chef Priyaka brings you her version of eggless carrot cake. Enjoy this unique and delicious cake recipe and do post your comments below.
Ingredients:
Flour- 1 ½ cup
Baking Soda - 1tsp
Baking powder -2 tsps
Condensed milk – 3/4th cup + 1tbsps
Buttermilk – 3/4th cup
Oil – 1/3rd cup
Cinnamon – tsps
Nutmeg – 1/2tsps
Castor Sugar – ½ cup
Brown sugar – ½ cup
Grated carrot – 1 cup (can add more upto 2 cups)
Raisins – handful (soaked with water for an hour)
Baking 10 mins at 200
160- 30 mins
Hung curd – 1cup
Method:
- Pre heat the oven at 200 degree celcius. Butter a 10 inch rectangular baking tin
- Sift flour, Baking soda, baking powder in separate bowl.
- Whisk together condensed milk, buttermilk, sugar, oil and spices (nutmeg, cinnamon)
- Mix this with the dry ingredients
- Finally mix grated carrot and raisins (without water)
- Scrap butter in the prepared tin and bake at 200 degree celcius for 10 minutes. Then further at 160 degree celcius for 30 minutes until baked
- Remove from the oven, let it cool down in the mold for 10 minutes. Demold and cool it off on a rack.
- Serve with lightly whipped hung curd (if sour, add bit Castor sugar and whisk)

ब्लॅक कैरट केक | Black Carrot Cake | Sanjeev Kapoor Khazana
A beautifully vibrant and a little different from the ordinary carrot cake, here comes an amazing black carrot cake which is equally delicious and has a very distinctive sweet flavour. A definite must try!
BLACK CARROT CAKE
Ingredients
2 cups grated black carrots
1½ cups butter, room temperature
1¼ cups castor sugar
1 tsp vanilla essence
3 eggs
1 cup almond flour
1¼ cups refined flour (maida)
1 tsp baking powder
½ tsp baking soda
A pinch of mace powder
A pinch of nutmeg powder
¼ cup orange juice
½ cup chopped walnuts + for sprinkling
¼ cup black raisins + for sprinkling
Poppy seeds (khuskhus) for sprinkling
Method
1. Preheat the oven at 180˚C.
2. Take butter in a bowl, add sugar and beat with an electric beater till the mixture is light and fluffy. Add vanilla essence and beat again.
3. Break in the eggs one at a time, beating the mixture after every addition. Fold in black carrots and set aside.
4. Take almond flour in another bowl, sift refined flour in it and add baking powder, baking soda, mace powder and nutmeg powder. Mix well.
5. Transfer black carrot mixture into the flour mixture and gently fold till well combined. Add orange juice and mix.
6. Fold in walnuts and black raisins and transfer the batter into silicon 6” x 3” loaf mould and sprinkle chopped walnuts, black raisins and poppy seeds.
7. Place the mould in the preheated oven and bake for 40-45 minutes. Take the mould out of the oven and allow the cake to cool slightly. De-mould and allow to cool completely.
8. Slice and serve.
