Wet Ingredients
4 medium-size eggs
120 ml oil (any oil of your choice)
1/2 cup sweetener
1/4 cup sugar-free maple syrup
1 tsp vanilla
1 cup shredded carrot
1/4 cup shredded coconut
Dry Ingredients
1 1/2 cup almond flour
2 tsp baking powder
1 1/2 tsp cinnamon powder
1 tsp allspice powder
Cream Cheese frosting
6 oz of cream cheese
1/4 cup cream
2 tbsp butter
1/2 cup powdered sweetener
My Recipe yielded about 8 servings of keto carrot cake & macros per serving as mentioned below.

How to make sugar free carrot cake
Sugar free carrot cake recipe
Ingredients:
2 Cups grated carrots
6 Egg whites
1 Cup Splenda brown sugar
1 Cup unsweetened applesauce
1 Cup milk (1 or 2%)
1 1/2 Teaspoon vanilla extract
1 Teaspoon ground nutmeg
2 Tablespoons ground cinnamon
2 Teaspoons baking soda
2 1/2 Teaspoons baking powder
3 Cups whole wheat flour
1/4 Cup chopped pecans (optional)
1/2 Cup raisins (optional)
Preheat oven to 350 degrees. In a large bowl beat 6 egg whites, then beat in brown sugar, applesauce, milk and vanilla. Stir in the nutmeg, cinnamon, baking soda, baking powder and flour. Lastly stir in the carrots, pecans, and raisins. Grease a 9X13 inch cake pan and pour cake mixture into the pan. Bake for 35-40 minutes or until a inserted toothpick comes out clean. Cool and serve.

The total glycemic load of the cake would be around 18 and if you cut this cake into 10 pieces, it would come out to be 1.8 glycemic load per piece which can easily be accommodated into your daily total 25 glycemic load.

Christmas Cranberry Cake
Ingredients
Fresh orange juice -100 ml
Mixed nuts- 50gm
Cranberry,black currant- 10 gm
Few walnuts and cashew for decoration
Cold pressed coconut oil -1/4 cup
Dry ingredients
Nutroactive Keto Atta -100 gm
Diabexy sugar - 30 gm
Baking powder- 1/2 tsp
Baking soda - 1/3 tsp
Mineral salt -1/2 tsp
Mixed spices
Ellaichi
Laung
Cinnamon
Nutmeg
METHOD
1) Soak all the nuts and berries in the orange juice for overnight.
2) First mix all the ingredients then add coconut oil. Mix thoroughly.
3) Take a cake tin , grease it with melted butter and pour the mixture.
4) Bake it for 50/60 min(180°). Keep monitoring, till the crust become dark brown.
5) Caution - Don't try to take out the cake while hot.
6) Allow the cake to cool at room temperature before taking it out
7) you can also try keeping it in fridge for an hour, after it become normal for better binding.
8) Remove it from the cake tin carefully. Decorate it with dry walnuts .
9) Cut it to pieces & enjoy.

Vegan WFPB Carrot Cake
Wet:
1 cup carrot puree (to make purée steam 2 medium carrots until soft and purée in a blender or food processor until smooth)
2 flax eggs (2 tbls ground flax mixed with 6 tbls water)
¾ cup date syrup
1/4 cup non dairy milk
1 tbsp apple cider vinegar
1 ½ tsp vanilla
1 ½ cups grated carrots
Dry:
2 ¼ cup oat flour
1 ½ cup almond flour
2 tsp baking powder
½ tsp baking soda
1/4 tsp salt
1 ½ tsp cinnamon
⅛ tsp cloves
¼ tsp nutmeg
Preheat oven to 350.
Line a 9” pan with parchment paper.
In a bowl combine all the wet ingredients and mix.
In a separate bowl combine all the dry ingredients and mix.
Pour the wet ingredients into the dry ingredients and mix to combine.
Pour batter into prepared pan.
Bake for 25-30 minutes, or until toothpick inserted in the center comes or clean. Allow to cool on rack.
Cream Cheese Frosting (optional
1 ½ cup raw cashews (soaked for min.2 hrs)
½ cup coconut milk or cream
2 tbls lemon juice
6 soft pitted medjool dates
1 tsp vanilla extract
Combine all ingredients into a high-speed blender. Blend until smooth. Once the cake has cooled completely, smooth frosting onto the cake, sprinkle with cinnamon and chopped walnuts.
