How To make White Cake (Diabetic)
1 1/2 c Cake flour
1 1/2 ts Baking powder
1/4 ts Salt
1/4 c Solid shortening
1/2 c Sorbitol
2 ts Clear vanilla flavoring
1 ts Water
1/2 c 2% low fat milk
2 ea Egg whites, stiffly beaten
Combine cake flour, baking powder, and salt in a sifter, and then sift into a medium sized bowl. Set aside. Beat shortening, sorbital, vanilla, and water together until creamy. Add flour mixture and milk alternately, beating well after each addition. Fold in stiffly beaten egg whites. Grease an 8 inch cake pan. Line pan with waxed paper and grease it again; then flour pan lightly. Spread batter into greased, lined, and floured cake pan. Bake at 350F for 30-35 minutes or until toothpick inserted in center comes out clean. Allow to cool. A Dessert a Diabetic can Love! - Chocolate Cake for diabetics
In this video Dennis Pollock shares a recipe for a great tasting dessert which is quick, easy, and best of all, low in carbs. Who ever thought that chocolate cake could be back on the menu? Amazingly, for many type 2 diabetics, it can! If you thought being diabetic meant you could never taste anything sweet again in your lifetime, think again!
Recipe for Chocolate Cake in-a-mug:
In a bowl mix the following ingredients:
- 1 egg
- 1 Tbsp almond flour
- 1 Tbsp coconut flour
- 1 Tbsp cocoa (non-sweetened)
- 1.5 Tbsp Olive Oil
- 2 shakes of salt
- 1 Tbsp stevia
- 1 heaping tsp of sour cream
- 1/2 tsp of baking powder
Stir thoroughly until smooth
Add a handful of almonds and stir some more
Transfer the mixture into a large mug sprayed with cooking spray
Bake in microwave for 90 seconds

Fruit Soaking:
Almonds (chopped) - 3 Tbsp
Cashewnuts (chopped) - 3 Tbsp
Dates (chopped) - 1/4 Cup
Black Raisins - 1/4 Cup
Golden Raisins - 1/4 Cup
Glazed cherries - 1/4 Cup
Tutti Fruity - 1/4 Cup
Orange/Grape/Apple Juice - 1 Cup
To grind:
Dates (chopped) - 1 Cup (18-20 Nos.)
Hot Milk - 1 Cup
Cake:
All Purpose Flour/Wheat Flour - 1 1/2 Cup
Milk Powder (optional) - 2 Tbsp
Baking Powder - 1 Tsp
Baking Soda - 1/4 Tsp
Salt - 1/4 Tsp
Cinnamon Powder - 1/2 Tsp
Cardamom Powder - 1/4 Tsp
Dry Ginger Powder - 1/4 Tsp (optional)
Nutmeg Powder - 1 pinch (optional)
Clove Powder - 1 Pinch (optional)
Sunflower Oil/Melted Butter - 1/4 Cup
Orange Essence - 1/2 Tsp
Vanilla Essence - 1 Tsp
Apple Cider Vinegar/White Vinegar - 1 Tsp
Method:
*Soak all the dry fruits mentioned under 'Fruit Soaking' in fruit juice for minimum 3 hrs.
*Soak dates in hot milk for 1 hr.
Grind the dates and milk to fine paste after 1 hr.
*Sift the dry ingredients together and keep aside.
* Pour the dates milk paste in a big bowl.
* Add sunflower oil/Melted butter and mix well.
* Add orange and vanilla essence and mix well.
* Add half of the sifted dry ingredients and mix with a spatula.
* Add rest of the dry ingredients and mix well with spatula.
* Do not overmix the batter, mix until just combined.
* Finally add Apple Cider Vinegar/White Vinegar and mix well.
* Pour the batter in a greased baking pan.
* Level the top with spoon.
* Decorate with some dry fruits if you like.
* Tap the cake tin 3 - 4 times to remove air bubbles.
* Bake in a pre heated oven at 180 degree celsius for 50 - 60 minutes
OR until a toothpick comes out clean.
( Pre heat at 180 degree celsius for 10 mins.)
* Let the cake rest in the pan for 15 minutes before removing.
* Remove from the cake tin after 15 minutes and let it cool in a wire rack completely before serving.
