How To make Carroll Shelby's Gourmet Chili
1 1/2 pounds lean beef
* see note
1/2 pound lean pork :
* see note
1 cup onions chopped
1 large garlic clove :
finely chopped
2 tablespoons bacon drippings :
or, lard
1 large green bell pepper ** see note
15 ounces tomato sauce
12 ounces beer :
preferably mexican
1 package original texas chili preparation
4 ounces green chiles -- diced
* or substitute 2 lbs. fresh vension for beef/pork, if desired. ** or substit ute 1/2 green and 1/2 red bell pepper.
Cut or grind meat into small pieces coarser than regular ground meat. Pound w ith meat mallet. Combine with onion and garlic and add to heavy, large pot or Dutch oven with lard or bacon drippings. Cook over medium-high heat until meat is browned and onions is tender, about 6 minutes. Stir occasionally to keep m eat evenly browned. Add bell pepper, tomato sauce and beer. Simmer, uncovered , for 30 minutes. Add remaining ingredients except packet of masa flour in Chi
more li quid is needed, add beer as desired. Mix masa flour with a little beer to make a thin paste. Stir masa mixture into chili. Simmer another 30 minutes. Check for taste and add cayenne pepper packet from Chili Preparation, if you dare.
Serves 4 to 6.

2005 & 2009 National Champion Red Chili Recipe - How to make a Red Chili
This video shows you the 2-time National Champion Red Chili recipe. This recipe was created by Margaret Nadeau and won the CASI Terilingua International Chili championship in 2005 & 2009.
She calls it Sahara Chili
To make:
STEP 1:
2 lbs. Course ground beef (chili grand)
1 TBS Cooking oil
1 TBS Granulated onion
Add ingredients together and lightly brown meat
STEP 2
Add:
1 can (8oz) Tomato Sauce
1can Beef Broth - I used 15oz
Cook for 30 minutes
STEP 3
Add:
1 TBS Light Chili Powder
2 TBS Dark Chili Powder
1 tsp Garlic powder
1/2 tsp Salt
1/2 TBS Cumin
1/2 tsp Cayenne
1/2 tsp Black Pepper
1 tsp Chicken Granules or 1 cube
Cook for 1 hour
Step 4:
Add:
1 TBS Light Chili Powder
1 TBS Dark Chili Powder
1 tsp Paprika
1/2 TBS Cumin
Add water if needed - I didn't - Perhaps using 8 oz of beef instead and using water at the end here will cut not on the saltiness.
Leave covered and simmer for 30 minutes.

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.
