King Ranch Casserole - Delicious Southwestern Comfort Food!
King Ranch Casserole is classic Texas comfort food. This southwestern dish is very simple, and very delicious.
No one know the origins of this casserole. It is not tied to the massive 825,000 acres King Ranch in South Texas. It seems related the Mexican dish chilaquiles. It was popularized using canned ingredients in the 1950s and every Texan family has a slightly different variant. This particular recipe comes from my good buddy Aaron Lain and his mother.(thanks for sharing)!

French Chicken Casserole with Apples and Apple Cider | Delicious Creamy Chicken Recipe
This French Chicken Casserole is going to be your new seasonal favourite. Chicken thighs and legs slowly braised in apple cider and served with fried apple wedges are as scrumptious as it sounds.
Chicken casserole is an incredibly general term and basically means chicken cooked slowly in the oven until tender. A good casserole is always what I go to when I want a true comfort food for dinner.
What you add to that chicken will make all the difference, and in my case I went with a French recipe for Chicken a la Normande. In this recipe chicken thighs and legs are slowly braised in a dry apple cider. Can you just imagine the aroma that is going to fill your house?!
INGREDIENTS
1 tbsp olive oil
2 lbs chicken thighs and legs
salt
4 shallots diced or one medium onion
1 rib celery diced
4-5 thyme sprigs
2 cloves garlic minced
125g/4 oz bacon lardons or 6 strips of bacon, chopped
2 tbsp brandy or whiskey
2 tbsp flour
85 ml/1/3 cup chicken stock
400ml/1 1/2 cups hard dry apple cider such as Strongbow
2 apples peeled, cored and cut into wedges
125ml/1/2cup double cream/heavy cream

There's nothing better than corn casserole homemade in a cast iron skillet ???? Just like Mom's recipe - this is my go-to recipe for corn casserole around the holidays. Made with basic ingredients, it's slightly sweet with a buttery crust (thank you cast iron skillet) - and has the perfect fluffy bread pudding texture. Yum!

Seafood Casserole

Ingredients
Casserole:
1 pound 16/20-count cooked shrimp, thawed and chopped
2 cups lump crabmeat
2 cups mayonnaise
1 cup cooked lobster meat
1 cup diced celery
2 tablespoons Dijon mustard
1 tablespoon sherry
3 dashes Worcestershire sauce
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 green onions, sliced thin
1 small green bell pepper, diced
Hot sauce, to taste
2 cups potato chips, crushed
2 tablespoons chopped fresh parsley
Simple Green Salad:
5 tablespoons olive oil
3 tablespoons lemon juice
1 tablespoon chopped fresh chives
1 tablespoon honey
Kosher salt and freshly ground black pepper
1 head butter lettuce, leaves separated
Green baby mesclun, for serving
Directions
For the casserole: Mix the shrimp, crabmeat, mayonnaise, lobster meat, celery, mustard, sherry, Worcestershire, seafood seasoning, salt, pepper, green onions, bell pepper and hot sauce in a large bowl. Taste and adjust the seasonings. Transfer to a medium-sized baking dish. Cover and refrigerate for at least 1 hour or up to 24 hours.
When ready, preheat the oven to 350 degrees F.
Top the casserole with the chips and bake until golden and heated through, about 30 minutes. Remove and let rest 5 to 7 minutes before serving.
For the simple green salad: Meanwhile, to a mason jar, add the olive oil, lemon juice, chives, honey, salt and pepper. Place the lid on the jar and shake to combine. Drizzle over the salad leaves in a bowl and toss.
Garnish the casserole with the chopped parsley and serve with the salad on the side.
