8 oz Almond paste
1/2 c Sugar
2 Egg whites

together, makes a messy batter, then take about 1 - 2 tablespoons or larger if you like and roll in either pignolas (pine nuts, my favorite) or flaked almonds or nothing at all. shape into either a ball or crescent. Bake about 10 - 15 minutes in a 350 degree oven on brown paper on a cookie sheet, no grease!! When done slide the brown paper on a wet dishtowel which has been laid out flat on the counter, it must be wet not just damp. Within seconds your cookies will lift from the paper with a spatula.JM. Vegan. Alkaline. Low sugar. Low acidic.
This recipe has 15-16 grams of sugar per tablespoon. 48 grams of sweetener in recipe.
Theobroma means food of the gods.
Theobromine is found in Theobroma Cacao.
Toast 1 Cup Almonds.
Put In the Food Processor:
Maple Syrup - 3 Tablespoons
Vanilla Extract - Dash
Shredded Coconut - 1 Cup
Toasted Almonds - 1 Cup
Cinnamon - Dash
Salt - Pink Himalayan - Large Pinch
Cacoa Powder - 6 Tablespoons
Chop together in Food Processor.
Melt together in small sauce pan:
Cacoa Butter - 1 Chunk/ 1.5 Ounces/ 44 Grams
Coconut Oil - 3 Tablespoons
Then Add to Food Processor.
Chop in Food Processor until blended crumbly texture.
Goji Berries - If Desired - 1 Handful.
Stir in.
Line cookie tray with parchment.
Shape into small patties.
Refrigerate for at least fifteen minutes.
Or freeze.
Enjoy Choco Coco Almond Patties with a wonderful cup of ginger tea or coffee.

嗨!大家好,我是 Cassandre,這集的『食,不相瞞』,我們要來分享一個,絕對可以說是我吃過最好吃的法式餅乾,就是法式杏仁瓦片(Tuiles aux amandes)。
這個法式杏仁瓦片(Tuiles aux amandes)名字裡的 Tuiles,法文原意指的就是屋瓦(又有彎曲薄脆之意),所以在法式甜點當中,只要是向這樣彎彎的又薄又脆的餅乾,都稱為瓦片餅乾,杏仁瓦片作法與材料都很簡單,製作的時間也很短,不會特別甜膩,堅果香氣十足,長輩小孩都會很喜歡,非常適合作為家裡的常備小甜點喔。
一樣的,在影片後段我們提供了一些製作法式瓦片餅乾的小小經驗談,像是怎麼烤出薄的剛剛好的瓦片(杏仁瓦片不能厚,厚了口感就會像煎餅),以及保存還有杏仁片的選擇等等 ^^
烤溫的部分,我們是以 Panasonic NU-SC100 蒸汽烘烤爐(蒸氣焗爐/蒸焗爐)來烘焙,不同烤箱的條件會有一些差別,在溫度設定以及時間上,大家可以依據影片裡的設定來調整。

法式杏仁瓦片(Tuile aux amandes)怎麼作呢?
下面是杏仁瓦片餅乾的作法與食譜:
* 份量為 16 片餅乾。
Ingredients:
* 蛋白 33克 / Egg white 33g
* 細砂糖 40克/ Granulated Sugar 40g
* 鹽 一小撮 / A pinch of Salt
* 低筋麵粉 13克 / Cake Flour 13g
* 融化的無鹽奶油 13克 / Unsalted butter 13g, Melted
* 厚片杏仁 30克 / Sliced almonds 30g

法式杏仁瓦片餅乾的作法:
1. 把蛋白打散
2. 加入鹽跟細砂糖,攪打至勻
3. 接著加入過篩的低筋麵粉,一樣是打到很滑順、看不見乾粉與顆粒
4. 加入融化的奶油,繼續攪拌,直到麵糊變成很滑順的質地,有點像煉乳的感覺
5. 用小湯匙舀一小勺麵糊到烘焙布(或矽膠墊/烘焙紙)
6. 用湯匙背面輕抹成7x10公分大小的楕圓形
7. 擺上杏仁片,然後準備烘烤
8. 用170度C預熱,140度C烘烤15~18分鐘,或烤到餅乾上色即可
