Awesome Meatless Meatloaf
This meatless meatloaf defies description except to say it brought me back to my meatloaf-loving days. I will be making this . . . 2 1/2 cups vegetable broth 3/4 cup cooked millet 1 cup onions 2 teaspoons dried or 1 tablespoon fresh sage 2 teaspoons dried or 1 tablespoon fresh thyme 4 cloves garlic, minced 1/2 teaspoon pepper 1/8 teaspoon nutmeg 1/4 cup hot water 2 tablespoons Miso paste 3/4 cup ketchup separated - 1/4 cup and 1/2 cup 1/2 cup Nutritional yeast
Bring broth to boil. Add millet. Reduce heat to simmer. Cook until liquid is absorbed.
Saute onions and garlic. Add herbs and spices.
Take 1/4 cup hot water and blend with miso. Add to sauce pan. Add 1/2 cup ketchup and Nutritional yeast.
Add millet.
Lots of fresh parsley. About a cup.
Pour into loaf pan. Bake 350º for about 30 minutes.
Can be frozen by the slice or by the whole loaf.
