Walnuts 70g
Medjool dates 150g
2 tbsp coconut oil
2 tbsp carob powder
1 tsp caramel
Pinch of salt
Ganache:
1 tbsp melted coconut oil mix with 1 tbsp of carob powder

CAROB COCOA MIX
3/4 cup roasted carob powder
3/4 cup sugar (whole cane sugar is nice)
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 tablespoon vanilla
1/4 teaspoon almond extract
Whisk carob powder, sugar, salt, and cinnamon together in a medium mixing bowl. Drizzle vanilla and almond extract over mixture and whisk well.
Transfer mixture to a clean, dry pint jar with a lid. Label and store up to one year.
Yield: 1 1/2 cups mix; about 12 servings

TO MAKE 1 SERVING OF CAROB COCOA:
Whisk together 1 cup milk plus 1 heaping tablespoon CAROB COCOA MIX in a small pan. Place over medium-low heat until steaming, stirring occasionally. Do not allow it to boil.

Carob cake is a great alternative for those who are allergic to chocolate, because the flavor and appearance is almost identical.
For those of you unfamiliar with carob (alfarroba), it’s the dark and mysterious looking seed pod that comes from the alfarrobeira (carob tree). It also happens to be the source of several sumptuous and earthy desserts in Portugal!
The alfarroba pod is a slow grower, taking about six – eight years to produce fruit, though planted cuttings from another mature tree may only take 3 – 4 years in ideal conditions.
A chocolate lover will never give up chocolate, but they may come to love Alfarroba for its delicious similarities.

100g of brown sugar
3 ssp of carob powder
1 tsp of cinnamon powder
2 tsp of baking soda
5 ssp of vegetable oil
1.5 dl of natural orange juice
Oven: 180°C / ca.25 minutes

Ingredients:
200g walnuts
50g dates
30g carob powder
50g raisins
1 tsp vanilla extract
Instructions:
1. soak walnuts for a few hours.
2. put all the ingredients in a food processor and blend well.
3. put the mixture into a tin.
4. leave in a fridge for a couple of hours.
